I'm a southern girl, so I know a little about okra. Some people eat it as an appetizer pickled, although I've not tried it that way. As a side, you can boil it, but it looks really gross because it get slimy.

Fried is the best way to me. Just cut it into about 1/4 inch slices, THEN rinse it (don't rinse or wash it first). I use a colander to rinse it. Then I put salt on it and half and half white corn meal and flour. Put the breaded okra in a heavy pre-heated skillet with about 1/4 inch of vegetable oil, place in a single layer. Don't turn the okra til one side is brown. Just toss them till they are nicely brown on all sides.

Okra? It's good fried, and is the basis for gumbo recipes.

Here's how to fry it:
1 pound okra pods, stem ends cut off, sliced 1/4-inch thick
salt
cold water
yellow cornmeal
salt and pepper

Put sliced okra in a bowl, sprinkle generously with sal; cover with very cold water. Refrigerate the okra for at least 1 hour. Drain; roll okra slices in cornmeal seasoned with salt and pepper until well-coated. Fry in a deep skillet in about 1/2-inch of hot oil until browned and crisp. Drain on paper towels and serve hot.

Pickled okra is good, too. Here's how:

1 qt white vinegar
1/2 cup salt, not iodized
1 cup Water
fresh okra
dill seed
hot red peppers
hot green peppers
garlic cloves

Place 1/2 teaspoon dill seed in bottom of each sterilized pint jar. Pack washed fresh okra as tightly as possible in each jar being careful not to bruise the okra. Add 1/2 t dill seed, 1 hot green pepper, 1 hot red pepper and 1 clove of garlic to each jar.

Bring to boil the vinegar, water, and salt. Cover okra with hot mixture. Seal jars and process in boiling water bath according to jar manufacturer's instructions. Allow to stand two weeks. Chill before serving.

fried okra is great. i know you bread it and fry it, but you can find a recipe for better directions, lol. also i had some veggie stuff recently as a side that had okra and was really good. It was okra, squash, onion and tomatoes. Boiled altogether in little water (enough to cover it), with seasonings, and put on white rice. It was really good too... Good luck!!

You can also smother okra with onions and other seasonings. It's very delicious. 2D
