personally i'm not a fan of sandwiches, so here are some of my favorite take-to-work lunches: mini pizzas: cut an english muffin in half, top each half with 1 tsp pasta sauce, 1 slice pepperoni or ham, and 1 slice cheese. This is only 320 calories, so i usually add a low-fat yohurt, and about 10 baby carrots and 2 chopped celery sticks. Then I get a full 400 calories which is a good sized lunch. yummy salads: i love spinach salad topped with dried fuit (i love prunes), almonds, boiled egg, and blue cheese. i take leftover from last nights dinner: a little bit of pasta and sauce, some rice with veggies, etc. cold alphagetti: most people think this is gross, but i love it. A whole tin is only 300 calories, so you get to eat a reasonably sized salad/a piece of fruit/veggie sticks too. An apple, a pear, cheese slices, ham slices, mixed nuts. very delicious!

buy hoagie rolls and deli roast beef and some au jus mix (in the soup aisle)
toast the rolls, warm the beef in a skillet or in the microwave, mix up the dip and ENJOY!

Bake a ham or roast a large chicken (or cook both at the same time). Have your evening meal from each of them. Then from the ham, you can make sandwiches, chef salads, ham and egg sandwiches, ham salad on a bun, cut some very small and make bar-b-que, make chili using the ham instead of beef, make sloppy joes, make a stratta which is a ham, bread and egg dish that is baked or have cheese, crackers and ham and so on. Side salads or chilled sliced crisp vegetables with Ranch dressing for dip are also good choices.
For the chicken, make chicken salad stuffed tomato, chicken salad on bread, bar-b-que, with salad greens, chicken, broccoli and rice casserole, chicken and cheese burritos with refried beans and salsa, chicken, bean sprouts and dressing in pitas or flour tortillas, chicken, romaine and Caesar dressing in a tortilla or wrap, or pita.

My son and I love this one -
flour tortillas, shredded Taco cheese, medium salsa
Place 1 tbsp margerine in med heat skillet and allow it to melt. Turn skillet to coat bottom evenly.
Place tortilla in skillet and allow to toast for 2.5 minutes. Flip it over. Place shredded cheese and salsa on half. Use spatula to flip over the empty half of tortilla and form a crescent shape. Allow to toast for 2 minutes. Serve.
These take less than 5 minutes to make. You can add shredded chicken, or leave salsa out, based on your preference. You can easily cut them into wedges with a spatula. Kids love them.
I typically serve apple slices, yogurt, baby carrots and ranch dipping sauce.
zero clean-up and it's a nice light lunch.

SLOPPY JOE SQUARES
1 1/2 lbs ground beef
1 cup tomato sauce seasonings for sloppy joes
2t chopped onions
1/2 tsp. salt
2 cans crescent dinner rolls
2 cups shredded cheese (cheddar or mozzarella)
Brown ground beef and tomato sauce in skillet. Add your seasonings, onion and salt.
Separate each can of crescent rolls into two large rectangles. Press two into a large 9 by 13 pan.
Spoon on meat mixture and sprinkle the cheese on top.
Place two remaining rectangles of dough on top of meat and cheese.
Pinch edges and brush top with milk.
Bake at 425 for 15 to 20 minutes.

HOT ROAST BEEF SANDWICHES
1 lb. thinly sliced roast beef
1 can beef broth
1 whole onion, thinly sliced
3 cloves garlic, minced
1 small can sliced mushrooms
3 tablespoons Wondra flour
2 tablespoons ketchup
1/2 tsp. onion powder
1/4 tsp. garlic powder
1/4 tsp. each salt and pepper
In a medium saucepan, bring beef broth to a boil. Add onion and garlic powder, ketchup, minced garlic and sliced onion.
When broth comes to a rolling boil, drop in the separated sliced roast beef and remove immediately from heat. Using a slotted spoon, remove roast beef from broth after 2-3 minutes. Return broth to stove on high setting and sprinkle Wondra flour over surface, stirring briskly to avoid lumps.
Simmer over medium heat 5 minutes. At the last minute, drain the sliced mushrooms and add. Pour over roast beef on white bread. Season to taste with salt and pepper. Serve.

TOMATO MAC AND CHEESE
1 box 16oz elbow macaroni noodles
1 can 14 1/2oz diced tomato
8 oz block sharp cheddar cheese
16 oz block Velveeta cheese
1 1/2 cups of milk (2% or vitamin)
salt and pepper to taste
Bring water to a rapid boil, add the box of macaroni and cook uncovered for 8 minutes stirring frequently. While the noodles are boiling, cut cheese into small blocks. The 2 kinds of cheese should be on separate plates so they don't combine.
Once the noodles are done, drain them and place back into the pot on a separate burner that is not on. Stir in the can of diced tomatoes.
Preheat oven to 350 degrees.
In a medium sauce pan, pour in the 1 1/2 cups of milk. Turn to medium heat. When milk gets hot, start to stir in the Velveeta cheese one block at a time; (DO NOT STOP STIRRING OR LEAVE THE MILK AND CHEESE SAUCE! - This will cause your sauce to burn.)
Once you have all the Velveeta cheese melted and mixed with the milk, set aside.
In a medium sized clear pyrex baking dish, add sharp cheese blocks to the tomato and noodles mix. Mix together. Pour all of the mix into the pyrex dish then add the milk and Velveeta cheese mix on top.
Be careful not to overfill the pyrex dish.
Place in the pre-heated oven for 45 minutes, let cool for 15 minutes and serve.
This is a great way to get the kids to eat a tomato....

PEPPERONI PINWHEELS
3-4 fajita sized flour tortillas
10 slices pepperoni
2 t. Kraft Shredded Parmesan, Romano, and Asiago (in dairy section)
4 oz softened cream cheese
1/8 t. dried minced onions
1/16 t. garlic salt
dash or 2 of pepper
¼ t. freeze-dried or fresh chives
dash chili powder
¼ t. parsley flakes
smidgen dill weed
smidgen oregano
dash hidden valley ranch seasoning
Dice up pepperoni. Mix all ingredients except flour tortillas in a small bowl. Stir together well. Spread onto flour shells. Roll up then put in refrigerator or freezer until cream cheese is firm. Slice up into desired pieces. Enjoy!

BLT CHICKEN SALAD
1 med. head iceberg lettuce, shredded
1 med. avocado
3 c. shredded cold cooked chicken
1/2 lb. bacon, crisply cooked and crumbled
2 lg. tomatoes, peeled, seeded and diced
PARSLEY HERB DRESSING:
1/2 c. salad oil
1/4 c. white wine vinegar
1 tsp. salt
2 tsp. sugar
3/4 tsp. pepper
1/4 tsp. dry mustard
1 clove garlic, minced or pressed
1/3 c. finely chopped parsley
Blend well.
Place shredded lettuce in salad bowl. Peel, pit and slice avocado and place on lettuce with the chicken, bacon, tomatoes and avocado. Pour dressing; toss well and serve immediately. Garlic bread goes very well with this salad. This salad does not keep overnight. Dressing may be made ahead of time and stored in container, but once added to salad should be served immediately.
