While Church doctrine, I believe, teaches that animals do not have souls like humans, St. Francis of Assisi often said that since God created all things that He loves them and that they will return to Him someday. He is the patron saint of many thing, including animals because of this teaching. Since I've had pets that I've lost in the past I take some comfort in this. :)

I am sorry to inform you that you have been under a mistaken impression. There is nothing to indicate that "all" of God's creatures were created equal. Honestly, I can't imagine where this idea originated.
Since the beginning of time, man has ruled as the crown of God's creation, and so far, there has been nothing created, which compares to humanity.
Animals live by instinct alone, while man lives slightly by instinct (survival, for example) but mostly by morals and reason.
We, above all creatures are able to, not only solve problems, but solve problems in a moral manner.
It is not just our intelligence that separates us from lower beings, but our ability to think in the abstract, our ability to reason, and our ability to understand and behave according to morality, i.e. knowing the difference between right and wrong.
To think that ALL creatures are created equal is to lower humanity in to the savage world of hunting and breeding--no real purpose for existence.
The first animal ever killed was by God to make clothing for man. This indicates, that animals, though great for pets and having rights, STILL were meant to serve the needs of humanity.

The only way all of God's creations can be considered equal is that all are equally beloved, infinitely loved because He who made them is infinite.
According to Revelations, there will be a new heaven and a new earth. Now a new earth would be just a big, bare rock without life upon it. And if we're gonna be upon it with nothing else, well, where's the glory in that?
Personally, since I believe Jesus when he says that the Father is loving, I couldn't imagine Him being so unkind and unloving as to part us forever from our companion animals.
St. Francis obviously thought so too.

Animals return to the dust of the earth.
Ecclesiastes 3:21
Who knoweth the spirit of man that goeth upward, and the spirit of the beast that goeth downward to the earth?
Ecclesiastes 12:7
Then shall the dust return to the earth as it was: and the spirit shall return unto God who gave it.
God created man in his image not the animals.
Ge 1:26
And God said, Let us make man in our image, after our likeness: and let them have dominion over the fish of the sea, and over the fowl of the air, and over the cattle, and over all the earth, and over every creeping thing that creepeth upon the earth.
Peace be with you

God did not create all creatures equal.
The soul of an animal returns to the ground when it dies.
The soul of a man will spend eternity in Heaven or Hell depending on our acceptance of Salvation through Jesus.

No, it means that when man sinned all creatures were punished by travail in childbirth, aging, death and decay. This was applied equally to animals, insects, plants, and any other organism that you can name...
But unconditional forgiveness means that you have to believe in a non provable entity with no evidence, or if you haven't heard of it, you're toast.

Yes, pets will be in Heaven...
God would not make animals so perfect and give them life and then throw them away when they die...
There are already animals in Heaven, read Revelations..
He said every living creature shall be in Heaven with Him.

If your theory is correct...should Michael Vick be charged with 10-15 years instead of just two?
Let's call the "creatures created equal" theory to be another unfortunate grey area that some take poetic licence with in a fictional account.
