Would it be rude for someone to quote an authority on history if they are trying to prove a historical fact? Would it be rude to quote a noted scientist when they are trying to proof a sicentific idea? So why it would it be rude to quote an authority on religion/theology to try to prove a point on that?

No, it's not rude.

Believers look at their religious texts as absolute truth. They consider it the word of God and therefore infallible. To them, this is all the evidence they need. While that makes perfect sense to them, those of us who don't believe find this approach to be illogical.

Not so much rude as it is ignorant. I don't see how quoting from a religious text that has NO basis in fact proves anything. I mean, why and HOW is that proof? It's not proof.

I think it's funny when I ask for religious people to answer a question without bible quotes and I STILL get bible quotes.

By rude I presume you see quoting as disrespectful and failure to behave within the rules of this forum.
I don't think so.
If they really believed in their religious writings I would expect them to quote them.

Well, the whole point of religion is that it breaks down to what you want to believe (or what you do not want to).
People who have faith in their religion will always use their holy books as a source of authority, which is might not be rude, as much as it is uninformed and against any shred of intellectualism in a debate.
To support a point you must use as much factual information as posible, and holy books are not factual.

Yup... it's just a non-answer, unless the question pertained to the book, or why they believe something. Personally I think there should be more real to why someone believes than "it is written"; but if that is all they have, then that's all they have.
