Canker sores are NOT herpes.
Canker sores are basically just ulcers that can occur on the inside of the mouth, cheeks, lips, gums, tongue, etc. Cancker sores are not contagious.
Cold sores are caused by the herpes simplex virus (either herpes simplex virus 1 or 2). They almost always occur on the OUTSIDE of the mouth and on the lips. Cold sores ARE contagious.
The exact cause of canker sores is unknown. Some things that can cause them though are stress, fatigue, illness, accidental biting, menstruation, food allergies or even vitamin deficiencies of vitamins B12, iron, and folic acid.

Herpes simplex viruses (human herpesviruses 1 and 2) commonly cause recurrent infection affecting the skin, mouth, lips, eyes, and genitals. Common severe infections include encephalitis, meningitis, neonatal herpes, and, in immunocompromised patients, disseminated infection. Mucocutaneous infections cause clusters of small painful vesicles on an erythematous base. Diagnosis is clinical; laboratory confirmation by culture, PCR, direct immunofluorescence, or serology can be performed. Treatment is symptomatic; antiviral therapy with acyclovir, valacyclovir, or famciclovir is helpful for severe infections and, if begun early, in recurrent or primary infections.

Canker sores are NOT oral herpes, cold sores are. If you have a canker sore, then that's what it is. It's not entirely known what causes them, but stress, certain foods, hormones, medicines etc can all contribute to them.
