this is a recipe a really old mexican lady gave to my grand mother. it is for chimichanga's they are fantasic.
you will need:
1 4 pound pot roast
2or3 medium onions
6 cans mild green chilis
1teaspoon salt[optional]
1 dozen flour tortillas
serve with:
sourcream
shredded iceburg lettuce
guacamoli
shredded chese
refried beans
salsa
take a pot roast about 4 # and boil until it shreds apart.
pull the meat apart into stings, and return to broth. boil down until meat is barely covered with broth
add 2 or 3 medium onions chopped
6 cans mild green chili [ I think they are 4-6 oz cans ] cook over low heat until almost dry and turn off fire
spread small amount into flour tortilla and roll as for burrito, closing both ends
fry in very hot greased about 1/2 " deep turn only once
remove to paper towel to drain
you can put cheese and/or refried beans in with the meat if desired
serve with shredded iceburg lettuce , sourcream, salsa and guacamoli
when I make this, the whole neighbodhood wants to come

I live in Mexico.
My faves are:
Mole *****, tamal oaxaqueño, chocholuco ( the best tamales of all),pollo encacahuatado, chile en nogada, chilaquiles, lengua a la veracruzana, then there is the sopa de flor de calabaza, quesadillas de calabaza, and about once a year I can stand to eat huitlacohe. I do not like barbacoa, too bland, and do not care for panza, pancita, or pata although I have eaten them to prove that I am not squeamish about eating entrails of sheep,goats,pigs, and bovines. One day I might eat criadillas(testicles) and have eaten ubre and cran (udder and penis) because some wiseass probably thought it would be fun to serve to the gringo.
One Mexican treat that no one should miss is carne de obispo. My wife's grandad's recipe is the best.
I will not comment on other latino foods because you mention Mexican specifically and it would take so long, but I can say that I like Spanish and portuguese, from which HispanoAmerica and Brazil derive a lot of influence, Peruvian is good, not so impressed with Argentinian although I am sure they make something besides steak and empanadas. Who doesn't love Italian? I think French food might be the most over-rated latin cuisine, but I have had some very good food in France.
Speaking of France, French in fluence then, I love Cajun food as well as Creole, which has a Spanish influence also.

One of the best states to visit for Mexican food is New Mexico. There is not such a thing as a restaurant being able to cook like grandma, but for the most part, the majority of restaurants here come close. For a healthy red chili sauce, I use about 10 chile pods, hot, and bring to a boil for about 8 minutes,or until soft. Then I put in a blender with a little bit of hot water, and season with salt and a little garlic powder, and blend until the desired consistency. I am sorry that I can not give any measurements, but it is because it is cooked to taste.

Wow, sounds like you really lucked out. Mexican food is my absolute favorite. Every year for my birthday I go to this place called Ricos Tacos in the next town and get chile relleno with beans and rice, and a quesadilla. Soo good.
Honestly, I can't think of any Mexican food I've tried that I didn't like. Huevos rancheros, churros, Ibarra hot cocoa, tamales, enchiladas, tostadas, chorizo, burritos....I ⥠all of them!!
Now I'm hungry... :(
If you want recipes, I highly recommend allrecipes.com...
I would start with huevos rancheros since they're easy and fast. :)

I live in Northern California, near San Francisco.
There is a taco place or burrito stand on every other corner, or a really good family run restaurant, and I don't mean some huge national chain! We have fabulous Mexican food, and it is plentiful in the markets. Ask around, go the library and look at cookbooks, pamphlets from the food producers.

I love Mexican food - both the Tex-Mex variety and authentic Mexican.
I also love the foods I have tried from other Latin American countries: Peru, Argentina, El Salvador, etc. I am fortunate to live in a place with a variety of eateries that serve this kind of food.
And I can't forget to mention Brazilian food: Churrasco, feijoada, etc.

yea my mom cooks good mexican food! Enchiladas, tamales, chile relleno, carnitas, tacos of different kinds of meats, tostadas, tortas, red rice, beans. All good Mexican dishes you should try if you haven't tried them yet. If you live in SoCal, well then there will be like a Mexican restaurant on every corner........

My family loves Mexican food, it's a shame that we don't have the really authentic meixcan food. What we have is a lot of franchises that just improvise. Otherwise I'm addicted to the stuff.

i now im a lil mexican and i love that i can try and cook this whenever i want and dont get me wrong but home cooked mexican will taste totally different from a restuarant its better homecooked my opinion you should try the difference dont know why but it is i ll give you a simple easy recipe since hardly no one else did its called
Flautas
depending on the guest or people you have
can of shreded beef (find in any grocery store )
corn tortillas
lettuce
tomatoes
sour cream
guacamole (avacado sauce recipe follows)
salt &pepper to taste
salsa mmmm
*preheat a saute pan with enough oil to cover a tortilla soak for about a minute till soft
*heat meat in a bowl or pan till warmed
*get a tortilla put a x amount of meat in it and roll like a burrito when enough put in pan with oil to fry till fryed at your choice (i like them kinda of hard and soft ) usually till a lil golden brown
* put amount wanted on plate spread a lil sourcream, lettuce, tomatoes, cheese, guacamole, and salsa and taste mmmm realy good
guacamole
soft avacados
tomatoes
lemon
salt pepper to taste
cut tomatoes put aside
cut out avacados and smash with a fork untill smashed (lol) add in rest of stuff and stir ohh yeah squeeze lemons im sorry lol i

MOLE! The best Mexican food, bold and hearty flavors make this a superb dish. There are lot sof different types, but my favs are the Pueblan & Oaxacan moles.
