NGREDIENTS
1/2LB SOYA PROTEIN
1 BEEF OXO CUBE
2 CARROTS
1 ONION
1 CLOVE OF GARLIC
1TABLESPOON OF CORNFLOUR
METHOD
BOIL UP I PINT OF HOT WATER ADD THE CUBE UNTIL DISSOLVED ADD YOUR VEGGIES WHEN THEY ARE GRATED ADD THE SOYA PROTEN AND ADD CORNFLOUR
UNTIL ALL THE MIXTURE IS THICK AND ABSORBED PUT IT IN A BREAD LOAF TIN AND BAKE IT IN THE OVEN ON 220F UNTIL ITS HOT
THEN ADD YOUR VEGGIES OF YOUR CHOICE WITH BAKED PARSNIPS AND POTATOES ETC

This is OK so long as they are not vegan
Stilton and Walnut Mushroom Parcels
8 large flat mushrooms
2 shallots peeled and chopped (or small onion)
softened gently in olive oil on low heat
100g pk walnut pieces chopped
100g fresh breadcrumbs
1/2 grated nutmeg
3 tbsp milk
2 tbsp chopped fresh thyme
2tbsp chopped fresh parsley
salt & pepper
100g stilton thinly sliced
cooks string
Oven at 200c
Mix all stuffing ingredients except stilton and season.
Divide into four and place on four of the mushrooms, top with the stilton and place remaining mushrooms on top.
Tie each parcel neatly, place on oiled baking dish. Drizzle with a little more oil, bake for about 20 mins or so.

There are different types of vegetarians. Some consume eggs and/or dairy products and some don't consume either of these. You need to know which type of vegetarians they are. Grilled vegetables (especially portabello mushrooms) are nice. An Italian pasta dish may be okay, but most pasta contains eggs as an ingredient. If they like Indian foods, then make them muttar paneer. Rice is good.

Nut roast is always popular amongst us veggies - you could make one or buy one - marks and sparks do a great deluxe one. Simon rimmer is a chef who owns a veggie restaurant and wrote a book called - the accidental vegetarian - which would give you some more ideas..... Before you plan though I would ask them what they like - for example some veggies do not each quorn or dairy products. Also by asking you can feel assured that they will enjoy your food - everyone is happy!

I recommend Leek pie.
My dad was a vegetarian for 18 years and he always enjoyed it...
...and you'd be surprised how many non-vegetarians will enjoy it too!
The important part is to add quite a large amount of cream and butter when you make the leek filling...it makes it nice and rich and...creamy (surprising eh?).
Definitely a lot better than any of these tasteless soya alternatives to meat...after all...what's the point of being veggie and then eating pretend meat?
If that doesn't inspire you then try and find some recipies by Jane Grigson (mother of Sophie Grigson). She wrote one of the best vegetarian recipie books on the planet!

You can but a Quorn roast, which is like an alternative to roast chicken. It's simple to cook too, just put it in the oven for just under an hour. You can also buy vegetarian gravy.
You should check with your guests first though as everyone's tastes vary.

Make a vegetarian toad-in-the-hole with veggie sausages, and serve it with a lush veggie onion gravy. Jamie Oliver's toad-in-the-hole recipe is lovely (obviously without the pork sausages!) and Bisto Best onion gravy is vegetarian and delicious for meat-eaters and veggies alike, so that you don't have to be making two batches. I make it with some caramelised onions and garlic and a little bit of red wine mmmmmmmmmm Hx

If they are vegetarian Quorn make quite a nice roasting "joint" which can be served with veg potatoes and Yorkshires just like the meat can be.
if they are vegan soz mix can be made up to make a soya type joint to which you can add various nuts and seeds before roasting. to avoid having to cook two lots of veg and potatoes use vegetarian fats when cooking.

Ask what sort of things they like. Many vegetarians don't eat the fake meat options. They will be pleased you are going to such trouble.
