Baked Potato Wedges
3-4 med. potatoes
2-3 tbsp. melted butter
1/4 tsp. garlic powder
4 dashes parsley
Salt & pepper
Scrub potatoes. Do not peel. Cut each potato lengthwise in quarters. Stir together melted butter, garlic powder and parsley. Arrange potatoes skin side down on a shallow baking pan. Brush seasoned butter over cut surfaces of potatoes. Sprinkle with salt and pepper. Bake, uncovered, at 400 degrees for about 1 hour or until golden brown and tender when pierced.

sweet potatoes
INGREDIENTS:
1 can (16 to 20 ounces) whole sweet potatoes, halved lengthwise
1 1/4 cups brown sugar
1 tablespoon plus 1 1/2 teaspoons cornstarch
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 teaspoon shredded orange peel
1 can (approx. 16 ounces) apricot halves
2 tablespoons butter
1/2 cup pecan halves
PREPARATION:
Place sweet potato halves in a buttered 11x7-inch baking dish. In a saucepan, combine brown sugar, cornstarch, salt, cinnamon, and orange peel. Drain apricots, reserving syrup. Stir 1 cup of the reserved syrup into the cornstarch mixture.
Continue cooking and stirring over medium heat until mixture comes to a boil; boil for 2 minutes. Add apricotss, butter, and pecan halves; pour over sweet potatoes in baking dish. Bake, uncovered, at 375° for 25 minutes.
Sweet potato recipe serves 6.

twiced baked potato
wrap potato in foil and bake like normal, when it's almost done, take it out and cut in half, from long end to long end then scoop out the soft potato with a spoon, and mix in salt, black pepper, dried chives, garlic powder, fake butter or whatever.
brush the outside of the empty potato shell with oilve oil, put it on a oven tray and scoop the mashed potato back into the potato shell, and bake for 10-15 mins.

I'm lazy. I wash it, poke it with a knife, and stick it in the micro until it's nice and fluffy.
For sweet potatoes or yams, I love to cut them in wedges or chunks, toss with oil, balsamic vinegar, and rosemary and roast on a cookie sheet for about 30 minutes.

Red potatos, soft and juicy, Other then mash with raw egg, butter,milk---or plain w/butter. German potato salad, boiled potatos, all night in frig. Peel slice add, cooked bacon pieces,oil,vinegar,sugar. ------Safe to carry to picnic etc.

Yukon gold baked, toped with fresh salsa, cheddar cheese and sour cream.....
I also like to slice red and white potatoes and coat with olive oil and fresh Italian seasoning then bake in the oven until they start to turn brown on the outside...

I peel and boil yukon potatos and mash them myself and then stir in soy milk and ghee with some garlic and chopped green onions.
