If you want to serve ice cream but still follow tradition, you could mold some ice cream into a cake (maybe an ice cream bombe recipe, baked Alaska, or other ice cream cake) and "cut the ice cream cake" before guests go to the ice cream buffet.
I think wedding cakes have become ridiculous. Yes, they're beautiful, but is a cake - - any cake - - worth hundreds of dollars? It's insanity. Good for you for trying to find something new for your guests!

Although the ice cream may be a welcomed change, the wedding cake is a pivitol part of the wedding reception for many people. Traditionally, after the cutting of the cake is the point where any guests that don't plan to stay for the whole party may feel free to leave... If you don't cut a cake people who don't want to stay for drinks and dancing may feel uncomfortable.

I would prefer ice cream. All the weddings I go to have those vanilla cakes. Change tradition. Ben & Jerry's Ice Cream rocks!

Ben and Jerry's ice cream buffet. It offers more variety, and it's original. People aren't just stuck with the normal boring, single-flavored cake, they could have any flavor of ice cream they wanted and mix flavors and add toppings. It also probably tastes better.

Wedding cake. It is easier to serve, less messy and takes no freezer space. Ice cream for 100 guests would take up quite a bit of freezer space.
