Last week i went to El Torito and with my Enchiladas they gave me this little ball of what seemed to be cornbread but it was sweeter than corn bread. What was it? and How can i get the recipe?

Hello! My husband loves this stuff (me too!). You are going to be surprised at how easy it is to make. ENJOY!

“El Torito Sweet Corn Cake”
1 (7 1/2 ounce) package sweet cornbread mix
1/4 cup butter, melted
1/4 cup water
1 (15 ounce) can cream-style corn
In bowl, combine corn cake mix with melted butter. Add water and can of cream style corn. Mix until ingredients are combined. Pour mixture into a 9x5 inch loaf pan. Bake, uncovered at 350 degrees for 40-45 minutes or until liquid has been absorbed. Use an ice cream scoop to serve sweet corn cake as a side dish or for dessert.

Mexican Cornbread


"A new spicy twist on cornbread. Very rich and flavorful with a crisp topping of cheese."

* 2 eggs
* 1/4 cup corn oil
* 1 cup buttermilk
* 1 1/2 cups shredded Cheddar cheese
* 1 (8 ounce) can cream-style corn
* 1 large onion, chopped
* 2 fresh jalapeno peppers, seeded and minced
* 1 cup cornmeal
* 1/2 cup all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch square baking dish or a cast iron skillet.
2. In a small bowl, beat eggs. Mix in corn oil and buttermilk. Stir in 1 cup shredded cheese, creamed corn, onion, and jalapenos.
3. In a large bowl, whisk together cornmeal, flour, baking powder, soda, and salt. Stir the egg mixture into the dry ingredients. Mix well. Pour batter into prepared pan. Sprinkle remaining 1/2 cup cheese on top.
4. Bake for 30 to 35 minutes until center is set and top is golden brown.

Sounds like a hushpuppy made w/ Jiffy Cornbread Mix. They may have added some Jalapeno peppers and cheddar cheese to it.

SugarPie is right. That's exactly how you can make it. You can use Jiffy and add some chopped jalepenos and cheddar cheese or a can of mexicorn or whatever you like.
