Tofu ( I make my own).
I first make soy milk by mashing soybeans and let them steep, like tea, in hot water for about 15 minutes. I then take the hot soymilk and add some mineral salts to it, these causes the milk to coagulate into curds and whey.
I then take the curds and press them together to create a brick, and remove some water from it. The more water removed the firmer the tofu will be; this will explain the levels of firmness you see on the packages.
You can find some brands in vacuum packed foil bricks, Mori-Nu which will last months in your cupboard - these are also the best style to use for deserts.
The Chinese style comes in plastic tubs with water. This assures the tofu will not dry out. You can press water out of the tofu if you want it firmer. this style is great for stir fries and other main dishes.
I love my tofu.

Tofu is processed soybeans. It is usually white or pale yellow, spongy to the touch, and, as you noticed, packed in water. Most packages of tofu have an experation date that should be honoured. To store tofu, place it in a container that is at least half-an-inch taller than the tofu slab. Fill the container with water until the tofu is completely covered, then put a lid on and store it in the fridge.
All I know about the water is that it keeps the tofu from drying out and shriveling. It may lose some essential proteins or something (?)

It's kind of a cheese-like product made of soybeans. Somebody else can probably give a better description than that. My sister in law used to make her own, but I have never tried to do that.
Most tofu will keep for a pretty long time if you don't break the seal on the package. It usually has expiration dates like milk or juice. It usually will stay pretty good for about a week or so after it's opened.
Water keeps it from spoiling or drying out. Some of the harder forms of tofu don't need to be kept in water.
It can be frozen, but freezing changes the consistency and you need to drain it first.
Somebody who knows more about food can give you some better answers, but I have cooked and eaten the stuff for about 30 years.

Tofu is soybean curd.
I always drain the water and freeze it because it gives it a firmer texture. You can also keep tofu in the freezer for several months and just defrost in the fridge for a day or so before you cook it.

it's processed soy.
look at the labels... not all tofu is created equal.
average storage time is one week. water keeps it from dehydrating and going bad sooner.

Processed soy beans.
I don't really like processed foods so i dont eat it that often.
also most people dont know how to cook it, and it can be made pretty bad.
I suppose if you made it yourself and cooked it properly it wouldnt be so bad, though it seems like far too much effort to me.
i dont like processed foods :/
