Hi! I work in travel industry in Mexico, and I have just one quick question... how traditional do you want to go?
If you want to go really authentic try Capirotada it's very easy:
8 servings
slice a baguette into eight pieces and "seal" each one (lightly fry them) with butter, meanwhile if you can reach a mexican store ask for piloncillo if not just boil 2 liters of water with cinnamon and 1 1/2 cup of brown sugar or mascabado until you get a very light and watery brown syrup.
Place the baguette slices side by side in a baking pan, (prefferably glass), sprinkle pecans, walnuts, raisins, and any other fruits of the sort you like and pour the syrup on top while still hot. This is traditionally served with frying cheese (mozzarella will do), on top, it melts due to the syrups heat. I personally like it, however I leave this part up to your consideration. Serve each piece individually while hot, along with some syrup and fruit, I recommend serving in bowls or mugs.

Two Easy Mexican DeSSerts:
Buñuelos, which are flour tortillas fried in oil and liberally sprinkled on both sides with a sugar and powdered cinammon mixture, you do this while they are still hot and draining on paper towels. The tortilla will become very hard and crunchy. Kids love them.
You could also try empanadas. They're like pockets. The dough recipe calls for one kilogram of wheat flour, half a kilo of vegetable shortening and one 350 ml can of coca cola. Mix the three ingredients together and knead until you get this wonderful flexible dough. Take a piece of dough, roll it out flat with a rolling pin, take a can or any other cilindrical container and use it to cut out circles in the dough. Place a spoonful of strawberry or pineapple jam in the dough circle and fold it in half. Seal the edges VERY WELL. Press with your finger and thumb, or use a fork. If you do not do this correctly the filling will leak out while baking. Place the empanadas on a cookie sheet and bake until slightly browned, I bake them at 175 degrees centigrade, just figure out the conversion into fahrenheit. Each batch bakes in about 8 minutes. You can also use cajeta or milk caramel candy as a filling. Fill a bowl with sugar to roll the empanadas in as soon as they come out of the oven. If you do not do this the sugar will not stick. The recipe makes plenty of empanadas. I suggest you test it first. You will not be disappointed.

DULCE DE CAMOTE (Sweet potato dessert)
3 sweet potatoes peeled and cut in chunks
1/2 cup sugar - plus 1/2 tsp for baking dish
1/3 cup butter
1/2 tsp ground cinnamon
1/3 cup raisins
1 tsp grated orange peel
1/2 cup thick creme
Cook sweet potatoes in boiling water for 25 min. Drain and mash the hot potatoes with the sugar and the butter cinnamon, cream and half of the orange peel.
Preheat the oven to 165C . Grease a baking dish and sprinkle with 1/2 tsp sugar and remaining orange peel. Spread the sweet potato mixture in the dish and bake for 10 minutes. Garnish with the raisins and let cool.

Probably for a b-day for children that young, jello made with fruit and milk ( instead of water ) is very popular with the kids. Rice pudding is also trendy with the youngsters. As far as a meal, most Mexican dishes are easy and inexpensive to make. For something simple, beans and rice served with grilled skirt steak, some guacamole, and corn tortillas.

This is more Mexican inspired and kids like to decorate their own sundaes.
Mexican Caramel Sundaes
8 ounces store bought caramel sauce for ice cream
1/4 teaspoon ground cayenne pepper
1 teaspoon cinnamon (1/2 teaspoon for sauce, 1/2 teaspoon for tortillas)
4 (8--inch) flour tortillas
2 tablespoons melted butter
4 teaspoons sugar
2 pints Dulce de Leche caramel ice cream or caramel swirl ice cream
1 canister real whipped cream, from dairy aisle
4 ounces, 1/2 cup, Spanish peanuts
Preheat oven to 400 degrees F.
In a small saucepan, warm caramel sauce over low heat and season with cayenne pepper and 1/2 teaspoon of cinnamon. Place tortillas on a cookie sheet and brush liberally with melted butter. Sprinkle each tortilla with sugar and a pinch of cinnamon and bake until crispy and sugar has melted on the tortillas, 5 minutes. Remove tortillas from oven, let cool to harden and break into large, uneven pieces. Arrange the pieces of 1 tortilla in a sundae dish or on a dessert plate. Top with 2 large scoops ice cream. Drizzle the warm caramel sauce over each sundae using a spatula or wooden spoon. Top each sundae with whipped cream swirls and Spanish peanuts.

try the churros, it's something sweet and you dip it in chocolate sauce, will definitely be a hit to everyone!
or try a fruit filled chimichangas (flour tortillas filled with stewed fruits and with a light custard sauce.)
try some polvoron (mexican tea cakes)and even make it for the loot bags!
1 1/2 c. all-purpose flour
3/4 c. sugar
1 c. powdered milk
1 tsp. lemon extract
1/2 lb. butter, melted
Toast flour in frying pan until light brown, stirring constantly over moderate fire. Remove from heat and cool. Then add sugar, powdered milk, lemon extract and melted butter. Mix well and mold, using polvoron mold. Wrap in wax paper and serve.
