ie. RAW or is it only sea fish that get eaten in this manner?

It is not agood idea to eat freshwater fish raw. Especially from lakes. There is a risk of liver fluke. Nasty parasite. In Japan carp is sometimes used as well as freshwater eel. Farm raised fish should be safe, but why take a chance when you have so many choices?

Of course we eat fresh water fish as sushi. One of the most famous is Kohaku in the movie "Jiro Dreams of Sushi". It's that beautiful silver nigiri they showcase after the Akami or bright red blue fin tuna nigiri. In general any fish is fair game for sushi. The sushi masters will always find a way to prepare them safely. After all we do eat poisonous fish like fugu as prized sushi too!

well yeah, sushi is mostly freshwater.....and truly you can use whatever you want.......Sushi is not the rolls. Sushi refers to the Rice. The preparation is different than regular gohan (rice) in that there is vinegar and a dash of sugar. Sashimi is what refers to the fish.....and you can eat it in a sushi roll or by itself whether it be sea fish or fresh water fish. as for raw eating varieties it would be best to ask you fish monger or grocer depending on where you get your fish......even if you catch it.... i'm sure there are plenty of seasoned fishermen that could tell you as well

Salmon is in a lot of sushi. Isn't that a freshwater fish?

most salmon we get in stores is actually farm raised in fresh water ponds , so if you`ve eaten salmon in sushi , you have eaten fresh water fish . trout is also another good choice for homemade sushi .

Some may use freshwater version of eel. Other then that im not sure.
