Herpes is caused by the herpes simplex virus (HSV). Cold sores (oral herpes) are small blisters on the lip and outer edge of the mouth. The skin around the blisters is often red and inflamed. The blisters can break open, weep a clear fluid, and then scab over after a few days. Complete healing may take 7 to 10 days.
Canker sores are basically just mouth ulcers. A canker sore is a shallow sore shaped like a crater (ulcer) on your tongue or on the inside of your lip or cheek. Canker sores have a red border and a white or yellow center. They may be painful and can make it hard to talk and eat. You may have one or more than one canker sore at a time. Unlike cold sores (oral herpes), you cannot spread canker sores to other people.

Canker sores are not considered to be contagious. Coldsores and mouth herpes, on the other hand, are caused by the herpes simplex virus and are very contagious. Canker sores usually occur inside of the mouth, are gray in color, have a distinctive edge, and usually heal within 10-14 days, without treatment. Oral herpes, such as cold sores and fever blisters, never go away.

ohiojosh's answer is accurate. My doctor described canker sores as little ulcers in your mouth. They are white open sores mainly caused by stress and are very painful. They're not contagious. Herpes (cold sores) are contagious, typically on the outside of the mouth, and look like a scab.
