your husband is trying to change you, trying to make you turn your back on your beliefs. I don't think it's fair, he's trying to control you meanwhile he should be supporting you and your decisions.
if I were married and my husband didn't support my vegan lifestyle and told me to eat meat or he'll leave me then I'd choose veganism over him.
it's like asking you to leave your religion (that you're devoted to) over a relationship.

Frankly I feel that you're in a terrible situation, but if your husband is threatening to leave you if you don't eat meat again, then you've got a serious issue with your relationship anyway. I think it's an awful sign that he's treating you this way, and that if you do start eating meat again just to please him, you'll have more problems in the future when he decides he's unhappy with some other comparatively minor change. I'd understand his anger if you were preaching to him about meat-eating or whatever, but it sounds like you're not. The other issue is that if you aren't really vegetarian so much as starving yourself, in which case I'd suggest that you agree to eat more healthy food, but not necessarily meat.
It sounds to me that he's threatened for SOME reason. Maybe he knows you're making a healthier choice; maybe you look so good now with your weight loss that he thinks he may lose you to another person.
By the way, are you really only eating vegetables or are you just avoiding meat? Because if it's the former, you may be missing some crucial nutrients that can be found in nuts, grains, etc. Please make sure that you are eating a HEALTHY vegetarian or vegan diet and not just starving yourself.

Your husband doesn't seem to understand that you've been more than reasonable & fair with him-- I doubt that too many vegetarians would be cooking pork chops, fried chicken etc. nearly every night. If he and his mother suddenly have problems with you for not eating meat, there might be some other issue, especially after 2 years (I assume neither of them have had problems with your diet before now). In any case, this should be between you & your husband.
What you put into your body is your choice. I hope things work out for you. If you and your husband are open to couples counselling, this could really help put things into perspective & maybe you both can reach an acceptable compromise. Good luck!

Sounds like you may need a counseling session about this issue. Sorry to hear about this kind of situation.
I have a relative who always cooks whatever her husband wants and just cooks veggie stuff for herself at the same time. Been doing it around 30 years.

Wow! This is tough... It comes down to your personal choice.
Did you lose weight and start looking "sexy"?
Maybe your husband feels threatened by the new you and wants you back to your heavier self?
Ot... are you truly unhealthy? Are you ignoring what he's truthfully saying? Anorexia?
I doubt we can give you a very good answer since there's a lot going on that we don't know about.
I don't know why he's listening to his mother. He needs to cut those apron strings. He's a grown-up now, even though it doesn't seem like it.

Your husband shouldn't say he'll leave you if you don't eat meat, he's an ***...
If you sit there and "pick on him" about eating meat then he has a point, but you should tell him that its your body, you'll eat what you want. You cook his meals.

Are you sure that you have eaten nothing but veggies. Has your health suffered at all from your diet?
Just to clear things up, the vegetarian/vegan diet is not composed of salads, vegetables, fruit and fake meat. Fruits and vegetables are always important but they DO NOT make up the largest portion of any healthy diet.

Being vegan can be an art, one whose challenge is to take things that involve the suffering of the innocent and change them into something free of cruelty.
I'm vegan and these are some of my favorite things to eat:
Breakfast: bananas, cream of wheat with brown sugar and soy butter, cereal, pancakes or french toast with real maple syrup, vegan "sausage" patties, smoothies.
Snack: BRUSSEL SPROUTS =) no joke
Lunch: VEGAN "SAUSAGE" SANDWICHES, sandwiches with vegan deli slices(Tofurkey is the only one that's kinda funky), fruit, dinner leftovers, couscous salad, vegan sushi, potato or pasta salad.
Dinner: sloppy joes, "sausage" and gravy with homemade biscuits, Spaghetti and Trader Joe's "meatballs" or TVP, lasagna, Thai pad see ew, pad khi mao(drunkard's noodles), pad prig king, tofu+eggplant with basil sauce, yellow thai curry with tofu or vegan chikn and veggies and jasmine rice, Indian dal with homemade roti or dosai, channa masala, aloo gobi, vegetable or minestrone soup, pizza, STEAMED "PORK" BUNS with potstickers or spring rolls, sweet&sour/orange/lemon chikn, vegan pho or wonton soup, baked tofu, BBQ homemade seitan (tastes like BBQ'd ribs)
