I prepared my fresh veggie juice this morning with celery and carrots. I have it in the frig and i made over 3 cups and put it in a 3 cup plastic jar. I want to drink half now and the other half later. Will my juice loose its minerals if I leave the bottle half full for a few hours? I heard that fresh veggie juice should not be stored in a container with air in it because it will loose its minerals. If the liquid is not filled to the top does that mean it contains air?

It will be fine for a few hours. Yes, it contains air unless it is filled to the very top but that won't hurt it for half a day or so as you would like to do.

Yes, it will keep for a while, but I wouldn't try to keep it overnight.
According to my juice recipe book, fresh juice starts to lose it's vitamin and mineral content within 15 minutes after it's juiced.
And you are right- if stored for a long period of time, make sure the container is air-tight.

If life was ideal & you could stop & make Juice every time you wanted it ..but it is not
I smake large batches of juice & store in the fridge air & all. My daughter who teaches Raw Classes uses small canning jars to keep her juice fresh. The jars hold 1 serving & she fills them to the top.

It should be ok for a few hours but yes as time goes by the nutrients start to diminish. This is specially true if the vegetables are high in vitamin c.

Try to make as much as u need and finish it at once. Not only veggie juice but any food kept in the frigde is not that good in nutrients, that is what i've heard...
