Try this. My mom got this from a very nice saudi arabian women how cooked for us one time
Chicken breast - bone in our out (i like boneless skin less)
Scallopped style potatos
strips of onion
layer these in a baking dish or crock pot (potatoes, then chicken then onions) and pour on top stewed tomatoes so the potatoes are soaking in the juices. use spices like all spice or a mixture like nutmeg, cloves, and cinnamon and curry. let it all boil together in the oven or crock pot until the potatoes are tender. The chicken falls off the bone, this recipe is like butter. So good. I also found a white bean and rice recipe, unfortunatly I can't tell you how to make it but it has the same spices and its so good too. But experiment with those spices and you'll come up with some interesting tastes.

well its not puerto rican but this is my favorite family recipe:
arroz imperial
1/2 c. shredded cooked chicken breast
1/2 c. diced ham
1/2 c. shredded cooked beef
1 c. diced onions
1 pinch saffron
yellow rice, 3 cups
1 c. wine
1/2 c. mayonaise
cheese slices (white)
1 package of peas
1 slice of bell pepper (decorative)
:simmer meats in wine with onion and saffron. add garlic and sazon if you like. once the wine has cooked out add peas and heat through. mix in a pyrex dish with yellow rice. mix in mayo and smooth down (like a casserole). top with cheese to cover. bake at 350 for 20 minutes or until heated through and cheese melts. garnish with red bell pepper ring.

make a pernil. its a pork shoulder. What you want to do is either get a syringe with a large needle meant for insterting marinade in or just stab the crapp out of it and then shove all the seasongs init. I would reccomend making a large mixture of minced garlic salt butter and any other seasong you like then using that as a filler for those holes. Then i suggest marinading it for 2 days to ensure it is nice and flavored and juicy!
