What is the best way to make home made Salsa? Both Mild and Medium.

These are traditional Mexican recipes:

SALSA MEXICANA
3 ripe tomatoes chopped, 1/2 chopped onion, 4-6 chiles serranos chopped, 1/2 cup chopped coriander, 2 tsp salt, 2 tsp lime juice. Combine the tomatoes, onion, chiles, cilantro salt and lime juice in a sauce dish. Stir well and correct the seasonings. The salsa is best prepared 1 hour in advance so the flavours will blend. Makes about 11/2 cups.

SALSA DE MOLCAJETE (mortar)
5 chiles serranos, 2 ripe tomatoes,1 clove garlic,1 tsp salt
On a comal or iron skillet roast the chiles ans tomatoes for 8 minutes or until they are soft. Peel off and discard the burned skin from the tomatoes. In a mortar o molcajete grind the chiles and garlic. When they are roughly chopped, add the tomatoes and continue grinding. Add the salt. Serve.

Depending on where you live and what ingredients are available, you can use green chile, jalapenos, yellow hots, or other kinds of peppers. The best way to make it the right heat is to remember that you can always add more spicy pepper, but you can't take it out once it is in! You'll want to remove the stems, seeds, and veins from the peppers before you chop them.

If you want to make the salsa chunky and you are only making a small amount, you may want to hand chop or use one of the choppers that has a dual blade inside a container with a handle that you turn on the top of it all. Otherwise, if you want a more blended salsa, you can use a blender. Remember, though, with fresh tomatoes, if the salsa sits a while or is refrigerated over night, it will get a little watery on top.

Use your choice of pepper, fresh tomatoes, fresh mild onion (Vidalia or yellow work better than white usually), fresh minced garlic, a little bit of lemon juice, and salt to taste.

If you decide to use Cilantro, use it sparingly. It has a very strong smokey taste, and not everybody likes it. This is another thing that you can always add more of, but you can't take it out once it is in there.

1 yellow onion

6-8 Jalapenos stemed and seeded

4-5 ROMA tomatoes , seeded

1 cup fresh cilantro leaves, chopped

1 lemon, juiced

1 lime , juiced

Salt and fresh cracked pepper, to taste.

DICE jalapenos, onion, tomatoes with a knife- not a

food processor- it can turn mushy. Combine in a

glass bowl with chopped cilantro leaves, salt and

pepper, and squeeze lime and lemon juice all over

and mix well. Leave in fridge over night so flavors

combine. The next day it will be perfect. If you

want it hotter , you can use habaneros or serranos in-

stead of Jalapenos.

Key ingredients in salsa are:

Tomatoes
Onions
Cilantro
Cumin
Garlic
Spritz of lime juice (fresh, not that presweetened stuff)
Salt
Pepper
Some kind of hot peppers

The type of hot peppers you use determine the hotness. Use mild chilis for wimpy salsa. Use jalapenos for mild to medium salsa. Add serranos with the jalapenos for hot salsa. Use habaneros for liquid-hot-magma salsa.

Chop all veggie ingredients and mix in a bowl. Add the spices to taste. Serve fresh.

This recipe was alway a hit at my parties...

2-3 tomatoes diced
1/2 red onion diced
1 garlic clove finely minced
hand full of cilantro or as much you want
half of a small can of jalepino peppers or depending on how spice you want it to be. just chop it up.
Juice of one lemon and lime
1 tsp of tomato paste
pint of salt
fresh ground pepper for taste

combine all ingrediants only blend half and leave the other half not blended. So that you can have some chunks.

put some tomatoes in boiling water for 5 mins,take them out and steep in cold water for a minute then the skins easy to peel off,chop the tomatoes,chop a small red onion,1 clove garlic,1 green chili,tbsp chopped basil,tbsp lime juice pinch salt and pepper..voila

YUM....use fresh everything!! Tomatoes, chile serranos, onions, lemon, salt,and lots of CILANTRO. Throw it all in a food processor/blender and YUM! You have fresh salsa!

1 can of stewed and sliced tomatoes. 2 large green onions finely chopped. 1 large ripe tomato cored,peeled,seeded,and diced. 1/2 teaspoon salt. 1/2 teaspoon of black pepper. A dash of tobasco sauce.
