Our family made the desision to become vegan (as much as possible) One big thing we are having a hard time with though are pancakes (I only know how to make them with eggs) and my daughter LOVES pancakes. Any ideas? Is there an egg sub that I can buy somewhere. I always though eggbeaters were not eggs, but they are. Thanks!

Yes egg beaters are egg whites, so they are healthier than regular eggs, but still eggs. Try substituting a banana for the eggs. I've never tried it for pancakes, but I have used it to substitute eggs in cookies and cakes.

I've made vegan pancakes a few times when we've run out of eggs and milk. I just use a regular pancake recipe and replace the eggs with 1Tbs cornstarch and 1/4 cup water (or other liquid), and use soy/almond/rice/hemp milk instead of regular milk. The only issue I ever had was that they end up very slightly denser for some reason sometimes. You can also use fruit juice instead of milk. I like apple and grape a lot (though be careful with grape, they're extra easy to burn). Orange is not so good.

Here is my recipe for the best pancakes I have ever eaten! IHOP should serve them! 1/2 cup quinoa flour, 1/2 cup quinoa flakes (I use Inca Harvest Brand) 2 tsp baking powder, 1 tsp baking soda, 1/2 tsp sea salt. Dissolve 3 tbs ground flax seed in 3/4 cup warm water or rice milk (this is your egg replacer) Allow the flax to "gel" for a few minutes-it will be the exact consistancy of egg. Add the flax mixture to the well mixed dry ingredients, along with 2 tbs agave nectar and enough rice milk to make a pancake like batter. Allow to sit for a few minutes while you preheat your griddle over medium heat. Drop batter by 1/4 cupfuls on to hot griddle and cook as you would regular pancakes. These are really light and fluffy, and have a surprising egglike taste. I serve them with agave nectar, or use them to roll up veggies like a chinese pancake. Good luck!

Ener-G Egg Replacer is available at most natural food stores and online at www.veganstore.com and www.veganessentials.com (and other online vegan retailers, I'm sure). You use 1/2 tbs of the replacer and 2 tbsp water for every egg. It works reallly well in pancakes. Just mix the replacer and water BEFORE you add it to the batter.

And you know that you can use soy milk in the exact same proportion as cows' milk, right?

Try it without eggs or substitution, it works fine in whole wheat, regular, with fruit or without.

I always make my pancakes without any substitution for the eggs. You don't need eggs in pancakes.

I also make them without greasing the pan, just let the pan get nice and warm before you start cooking, the batter will cook as soon as it hits the pan, no need for oil or grease. This is in a regular iron fry pan, not non-stick.
