Yeah, I can't believe summer is almost over. Up here the winter is so long. But I love Fall and the food is so delicious and comfy.
Spinach and Minced Meat Soup
This hearty and healthy soup is delicately flavored with cumin and ginger and can be eaten as an entrée or teamed with crusty bread or plain boiled rice as a whole meal.
2 bunches spinach
500 gms minced beef
2 tbsps oil
2 tsps cumin seeds
1 tbsp grated ginger
2 large onions chopped fine
2 large tomatoes chopped fine
1 tsp chilli powder
1 tsp freshly ground black pepper
1 litre beef stock
Salt to taste
Lime juice to garnish
Wash and drain the spinach and keep aside.
In a pressure cooker heat the oil on a medium flame and add the cumin seeds.
When the cumin seeds splutter, add the grated ginger and sauté for a minute.
Add the onions and sauté till they are soft.
Add the tomatoes, chilli powder, pepper and minced meat. Stir and allow the meat to brown.
When the meat has browned, add the spinach and beef stock and cover the pressure cooker. Turn the flame to high.
When the pressure cooker whistles the first time, turn the flame down to a simmer and allow to cook till the whistle blows twice.
Turn off the flame, release the pressure from the cooker and serve out the soup. Garnish with a squeeze of lime.

Beef Stew.
1kg (2lb) Beef Steak.
25g (1 oz.) Flour.
S&P.
Oil.
2 Sliced onions.
1 Beef Oxo cube.
Cup boiling water.
4 Diced Potatoes.
1 Diced Carrot.
1 Diced Turnip.
Remove fat from beef and cut into bite sized pieces and rolled in seasoned flour. Brown in batches in the oil and place in a pot.
Fry off the onions and add to meat.
Add the stock cube and water and scrape all of the good bits from the fry pan and add to the meat and onions.
Stir together and bring to the boil. Reduce heat and d simmer for 2 hours.
Add diced vegetables ½ hour before serving.

PUMPKIN SPICE BREAD
2 cups canned pumpkin
3 cups sugar
1 cup water
1 cup vegetable oil
4 eggs
3 1/3 cups all-purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking powder
1/2 tsp. nutmeg
3/4 tsp. ground cloves
Heat the oven to 350 degrees. In a large mixing bowl, combine the pumpkin, sugar, water, vegetable oil and eggs. Beat until well mixed.
Measure the flour, baking soda, cinnamon, salt, baking powder, nutmeg and ground cloves into separate bowl, then stir until combined (a great job for kids). Slowly add the dry ingredients to the pumpkin mixture, beating until smooth.
Grease two 9- by 5-inch loaf pans and dust them with flour. Evenly divide the batter between the two pans. Bake for 60 to 70 minutes or until a toothpick inserted into the center comes out clean. Cool for 10 to 15 minutes. Then remove from pans by inverting them onto a rack and tapping the bottoms. Slice and serve plain, buttered or with cream cheese.

African Peanut Soup
1 garlic clove
1/3 c. tomato paste
2/3 c. peanut butter, crunchy or smooth
1/8+ tsp cayenne
4 c. veggie broth
1 sweet potato, diced
1 onion, diced
1 green pepper, diced
1lb winter squash peeled and cubed
Saute garlic in water. Add diced veggies and saute until mostly cooked. Add tomato paste, peanut butter, and cayenne. Stir until smooth. Add broth. Cover. Simmer 30 minutes or until veggies are tenderly edible.
