What a lucky question for me... it's easy, because I just used my jar of plum sauce a couple of days ago. :) I stir fried some veggies with it (broccoli, red bell pepper, baby corn, pea pods, etc.), had some summer rolls with it (Use tofu, raw or fried, instead of shrimp: http://www.recipelink.com/ch/2002/october/jocpartyfoods3.html )
and put some on my leftover Buddha's "duck" (made from yuba, which is bean curd skin: http://veganfeastkitchen.blogspot.com/2006/07/buddhas-roast-duck-with-yuba.html ) The duck was pretty hard to make, and it didn't come out very well, so it's more of an expert recipe.
You could probably also use it with spring rolls (http://www.cooks.com/rec/view/0,1618,132183-255193,00.html ), pour it on a salad, or maybe even as a sauce for a dessert if you can anticipate what flavors it will complement.

spring rolls are really good with plum sauce, just leave out the crab and use like shredded carrots, sliced cucumber, parsley, celery really anything you want there really easy to make and are REAL TASTY ha
