GARBANZO BEANS WITH SPINACH & DRIED TOMATOES
1/2 C dried tomatoes
1/4 C olive oil
4 garlic cloves minced
1/2 lb frozen chopped spinach (freezer bags better than frozen blocks)
2 cans gabanzo (chickpeas)
1 T vinegar
1/2 t salt
1/2 t red pepper flakes - (I like a little more zest!)
10 ounces couscous (whole wheat is good-about 1-1/2 C uncooked) - (I have also used brown rice)
Feta or Parmesan cheese
If tomatoes are in oil drain well and use oil as part of olive oil. If dry, boil 1/2 C water in microwave or saucepan and pour over tomatoes for 15 min. Drain, save liquid.
Put oil in skillet, med. heat, add garlic, add spinach, stir till wilted. Add beans, vinegar, sald & pepper flakes. Simmer, chop tomatoes very fine and add. Cook couscous as per pkg. When tender serve topped with beans and cheese. Serves 4
Good for cardiovascular system and vegan!!!

Spinach Pie
1 bag of spinach, fresh or frozen
4 eggs
Approx 8 1/2 ounces (or just over 3 quarters of a small packet) of chedder cheese, grated
Approx 1 heaped table/dessert spoon of dried marjoram
Approx 1 heaped table/dessert spoon of dried parsley
4-5 cloves of garlic, depending on your preference, crushed
Liberal sprinkling of salt
Shortcrust pastry
Boil the spinach until cooked, and drain. Squeeze as much of the water as you can from the spinach using your hands (great for relievng stress) and place in a mixing bowl. Add the remaining ingredients (apart from the pastry!) and mix thoroughly. Put the mixture in an ovenproof dish, and top with the pastry. Cook on a medium temperature until the pastry is golden brown, (for me that's usually about an hour and 1/4)

Spinach and mushroom creamy pasta's my favourite. I don't use spinach as a main ingredient often but I do use it a lot in other recipes like casseroles, pies or lasagnes. Sometimes I just have a small amount on the side of a dish with sesame seeds sprinkled over.

I would make Spanakopita. It's absolutely delicious hot or cold. Ideal for picnics, and a firm family favourite.
Here's the BBC recipe but you can adapt it yourself as you get used to it.
500g/1lb 1oz young spinach, washed and cut into thin strips
1 tbsp chopped parsley
1 small bunch spring onions, chopped
225g/8oz onion, finely chopped
120g/4¼oz feta cheese, crumbled
salt and freshly ground black pepper to taste
olive oil, for frying onions and brushing filo
6 thin filo pastry sheets
Serving suggestion
tomato salad
Method
1. Preheat the oven to 180C/250F/Gas 4.
2. For the filling, in a large bowl, combine the spinach, parsley and spring onions.
3. In a pan, gently fry the onion until golden. Add to the spinach mix.
4. Now add the feta and mix well. Season.
5. For the spanakopita, grease a shallow baking dish with oil and line with three of the filo sheets, placing one on top of the other. Brush each sheet separately.
6. Put the filling over the pastry and spread evenly. Cover with the remaining filo. Brush the top with oil and, with the point of a sharp knife, trace the crust into square pieces.
7. Bake for 40 minutes. When golden brown, remove and leave to cool. Cut and serve with a tomato salad.

Steam a large amount of spinach until wilted. Blitz in a blender until almost puree'.
In a pan melt a knob of butter and a tablespoon of creme freche. Stir in the spinach and reduce on a low heat until it is of an almost stiff consistency.
Serve immediately as an accompaniment (it goes well with fish but that is probably a non-starter on here)

Spinach artichoke dip, so good, you gotta try it and is so worth the good ingredients :)
Spinach and Artichoke Dip
1 14-oz can artichoke hearts, drained and sliced
1 lb cream cheese, room temperature
8 oz mascarpone cheese, room temperature
2 Tbsp all-purpose flour, sifted
1 cup Parmesan cheese, grated
1/4 tsp fresh thyme leaves
1/4 tsp crushed red pepper
1 Tbsp fresh flat leaf parsley, chopped
1 garlic clove, minced
5 green onions, chopped
Salt to taste
Ground black pepper to taste
1 6-oz pack fresh spinach, chopped
8 slices crusty Italian bread
Extra virgin olive oil (to drizzle)
Preheat oven to 325ºF.
MIX all ingredients in a large bowl, except bread and extra virgin olive oil. COAT a large non-stick baking pan with pan spray; fill pan with mixture. Bake at 325ºF for about 25 minutes or until bubbling and center is hot. DRIZZLE both sides of bread with extra virgin olive oil. Grill bread on both sides. SPRINKLE top of heated dip with parmesan cheese. Serve hot with grilled bread. Makes 4 servings
If you want to also, you can fill puff pastry pockets w/ the spinach dip and dip into some marinara sauce and tastes SOOOOOOOOOOOOO GOOD!!!! I use that recipe for a party too. I make 2 batches. One to fill the spinach and artichoke dip pockets for appetizers and one batch to put into a bread bowl. The bread bowl batch is awesome warmed up in the oven w/ some garlic butter on the outside. Nice and crispy and everyone wants a bite of that bowl...
Also, you can cook some regular cod fillets (w/ olive oil and slat and pepper on both sides) and satee some spinach w/ garlic, extra virgin olive oil, and some crushed red pepper flakes and it tastes phenomonal. Add some salt and pepper, and it'll be done :) It's also very healthy :)

Spinach and ricotta cheese filo parcels are good, just follow the instructions on how to cook the filo from the packet, and fill the filo with the spinach (which has just been wilted) and ricotta cheese and enjoy!
