Me. Grilled cheese.

Two slices whole grain bread
Two slices cheddar
Butter
Tomatoes
A small amount of feta or blue cheese for flavor

As always I am. We're going to have oven broiled hamburger steaks basted with KC Masterpiece BBQ sauce and Cajun style potato salad (yellow mustard added) and backed beans. Sort of an indoor BBQ because it's too darn hot to do it outside.

Cajun style potato salad

4 or 5 red potatoes peeled, diced (1/2 in) and boiled approximately seven minutes or until tender but not mushy.
Drain and chill in the refrigerator.

5 or 6 hard boiled eggs remove yokes and place in a bowl.
Chop up the egg whites finely and add to a bowl.

In a small bowl mash the egg yokes and then three or 4 heaping tablespoons of mayo and one or two of yellow mustard. add a small amount of very finely chopped raw onion, one tablespoon of dill relish, and one of sweet relish.
and one of finely chopped bell pepper.

Stir all of this up in a bowl and add the cubed chilled potato.

Add salt and pepper to taste.

Best if well chilled before serving. The raw ingrediants such as the onion and bell pepper can be optional, depending on your likes and dislikes.

Grilled rib eyes with garlic butter sauce, sauteed mushrooms and onions, fresh corn on the cob from the outdoor market, and a Caesar salad. No idea about desert yet... that's still up in the air. Since it's so hot, we might just go with ice cream.

Chicken Enchiladas w/sour cream sauce and spanish rice

2 chick thighs-boiled and then shredded
1/4 cup each, onion and jalepeno
8 oz shredded cheddar/jack cheese
9 corn tortillas
1 15oz. can green chili enchilada sauce
1 sm. container sour cream

Warm tortillas individually in warm pan, spread chicken, onion, jalepenos and cheese in each tortilla and roll. Place in casserole dish sprayed with cooking spray. Pour 1/2 enchilada sauce over enchiladas, sprinkle remaining cheese and bake for 30 minutes at 375. Mix remaining ench. sauce and sour cream and heat in microwave immediately before spreading on finished enchiladas. Since dinner will be somewhat rushed I'll be using boxed spanish rice instead of making my own.

Had a chicken breast in the fridge, so am marinating in lime juice, garlic, tumeric, and black pepper...

I'll broil it and serve with artichokes from the farmers market, some sliced tomatos with vinegar, and some french-bread.
