Tapioca starch is a strong binder with a neutral flavour. That's the main ingredient of the vegan egg-like products. I eat free/open range eggs but actually prefer the taste of a cake without any egg in it if the recipe permits and most recipes do. Banana works well to bind the ingredients in sweet muffin recipes too.

And if you use Ener-G Egg Replacer, make sure you mix the powder and water before you add it to the mixing bowl.
And GSmooth, did it ever occur to you that someone might be ALLERGIC to eggs?

For each egg ...

- Half a banana
- Tablespoon of cornflour mixed to a paste with level desert spoon of custard powder/cornflour.
- Half a teaspoon of bicarb (baking soda) mixed with half desert spoon of vinegar

i use applesauce you cant taste it but works the same as an egg would it will make yr cake moist as well

Silken tofu. There are different firmness grades of tofu, and you want to use the one that is the thinnest and softest. It's also good in smoothies. : )
