good dinner to cook for them,BTW I am making my mom cook since we are meeting with them again. This is a routine every other weekend we go over or they come over..BUT this time my mom wants to REALLY impresse them. Ok, this is my gf background..german/italian..please what can we cook???

Have your mother make her signature dish, whatever it is. As long as it's a great meal, that will be impressive enough. There's nothing like the perfect meat ball. If you are German/Italian how about some type of veal with pasta in a great sauce. Just make sure you don't coat the veal with too many bread crumbs. Takes away too much flavor. One on my favorite Italian dishes is bragiole.

Don't cook Italian, the future in-laws might critique it for how authentic it is. (And I'm German-American and I hate German food, so if someone tried to feed it to me I couldn't eat it!) How about roast Cornish game hens with lemon and garlic and fresh sage? A Mexican themed dinner? Or right now crab legs are on sale in the freezer case. Nothing like crab legs and lemon garlic butter!

I think your mom needs to just make her personal speciality, to show them how good a cook she is, and maybe get in something from a deli to accompany the meal - German cheese to go on crackers, or Italian panna cotta, maybe? This would please them, and they wouldn't criticize the accompaniment, because they would appreciate your mom's
thoughtfulness. I'm glad your family wants to be friends with your intended's family - not many do, these days.

Down south, the way we impress folks this time of year is to have a good backyard bbq. Pull out the smoker the night before & fix your choice of ribs, smoked pork butt, pork loin and my favorite - beer can chicken!!

Serve with traditional sides such as coleslaw, potato salad, baked beans, grilled corn on the cob, cucumber salad, deviled eggs...etc....

For dessert, it's ice cold watermelon, homemade ice cream or a good ole peach cobbler.......

Shrimp pasta

3/4 of a box of linquine
2 cloves garlic slighty smashed
3/4 stick of butter
1 pint heavy whipping cream
1 1/2 cups freshly grated parmesan cheese
1 lb. shrimp (feel free to put as many as you like in)
Fresh chopped chives, green onions or parsley (whichever you like)

Cook noodles according to package directions. In a large saute pan melt butter and add garlic. Let garlic flavor infuse into butter, remove and discard. Add heavy whipping cream and bring almost to a boil. Add cheese and stir until melted. Add salt and pepper to taste, check flavor and adust as needed. (sometimes I add more cheese depending on the flavor) Add peeled, deveined shrimp and heat through. Combine sauce and noodles and let stand at least 5 minutes so sauce can thicken. Place on dishes and top with the green onions, chives, or parsley.

Brushchetta

5 vine ripe tomatoes
2 cloves garlic
8-10 leaves fresh basil
1/3 - 1/2 c. olive oil
1/3 c. diced purple onion
salt and pepper to taste

1 loaf french bread or ciabatta
olive oil to brush on bread
fresh grated parmesan

In a food processor add garlic, basil leaves and salt and pepper. Turn on and slowy drizzle oil into top and add until desired texture. Cut tomatoes in half and gently remove seeds. Cut halves into this strips and then into about 1/4-1/2" pieces. Place in nice serving bowl and add onions and oil mixture; mix. Refrigerate at least 2 hours before serving.

15 minutes before dinner cut bread into thin slices. ( Cut on an angle for a fancier look.) Brush both sides with olive oil and place under broiler or at 450 degrees. Lightly brown each side and remove.

Salad ideas:

Simple dressing:

3 cloves garlic minced
1/4 tsp salt
2 lemons juiced, seeds removed
anchovie paste
3x as much veggie oil as lemon juice

In cruet put in garlic add salt and let sit 10 minutes. (This will bring out the oils in the garlic and make it look really mushy) Add lemon juice and about a finger tip length of anchovie paste. (This just adds a salty flavor but will not make it taste fishy, I'm not a big fan of anchovies but I promise this dressing is not the same without it.) Add oil and shake vigorously. Refrigerate and pull out about 10 minutes before dinner so oil won't be too thick. You can also add italian seasoning or oregano for added flavor and color.

I put this dressing over a greek salad but goes well with almost any. It tastes awesome with feta cheese. (I sometimes eat it with just feta, tomatoes and cucumbers!)

Another great salad is made with a homemade raspberry vineagrette. I use the prewashed baby greens salad that comes in a plastic container. Its got all different types of leaves and looks great. I thinly slice a granny smith apple that I immediatly put in water with a little lemon. This will keep the apple from turning brown and will keep it fresh. I usually put the apple in a fan shape, 4 per plate, on the side of salad dish. I put a layer of greens, purple onions, carrot shavings (use potato peeler), dried cranberries or cherries, and tosted walnuts or almonds.

I've never had anyone who didn't absolutely love these dishes.

What about grilled salmon ,baked mushrooms caps(big)filled with sundried tomatoes with feta cheese and a great salad served with fresh bread(not to heavy) and for dessert fresh strawberries and cream.

Party Cheese Ball
Janie Ferguson
2 c. Shredded sharp cheddar cheese
1 (8 oz.) Pkg cream cheese, softened
1 T. Chopped pimento
1 T. Chopped green pepper
1T. Finely chopped onion
2 tsp. Worcestershire sauce
1 tsp. Lemon juice
pecans or walnuts, chopped fine
dash ground red pepper
Combine cream cheese and cheddar cheese, mixing at medium speed on electric mixer until well blended. Add all ingredients except pecans, mix well, chill, shape into balls, roll into nuts, serve with crackers
Personal note: We enjoy this cheese ball at our family gatherings. I like to put it on bright colored plates and than set the plate on a larger plate with crackers of your choice all around.

Braised Chicken with Vegetables
½ c. flour
3/4 c. hot water
1 tsp. Salt
½ tsp. Salt
1/4 tsp. Pepper
1 ½ c, sliced carrots
3 lb. Chicken, cut up
3 c. celery
3 T. Fat or oil
3/4 c. chopped onion
3/4 c. chopped green pepper
Combine flour, 1 tsp. Salt and pepper; coat chicken pieces with mixture. Brown chicken in hot fat. Drain excess fat from pan. Put chicken and all other ingredients into crock pot and cook all day long.
Menu suggestion: Serve with Mashed potatoes, tomato and cucumber salad,and fruit pie for dessert.

your mother needs to cook with what she is "comfortable" with...set up the menu around this..if not...you cannot use your in-laws as guinea pigs at the last minute....trust me on this. my husband always accuse me ...because this is my favorite
doing...always like to impress
