Just do a jungle theme.

And bear in mind that at ONE YEAR, the boy isn't going to understand, care or remember. The party is for the adults, not the kids - especially if they're all about the same age. Have a party that the ADULTS will enjoy.

For my daughter's two-year party we made pizza's. Each kid got his/her own pizza crust (premade from the store) and pouch of pizza sauce. Then we had bowls of toppings for them to choose from. They had a great time! Parents loved this, too. We were all surprised at what our kids came up with. Then they got to eat them, which was doubly cool for them. We taped a sheet to the floor below the coffee table which was covered with a paper table cloth to collect any mess. We also make smocks out of cloth diapers (never used!) by tying two ends together (could also be done with muslin or plain fabric). Hmm - you could do that with animal print fabric for a jungle look.
