this question was already asked and a lot of people put down mushrooms as an answer. my question is how do you make mushrooms (and which mushrooms do you use) taste like oysters (one of the few foods i miss)? lucky for me i am a fungi fanatic!

There is a specific type of mushroom sold in specialty and asian markets called appropriately the oyster mushroom. It has a distincive fishy taste and smell, and should work just fine as a vegan sub for anything calling for oysters.

Why just 'shrooms? Salsify or oyster plant is an excellent vegetable and does have a mild oyster flavor. Don't see it at the stores here in Ok.. Might have to grow it or find it at a farmers market. When I was a kid we could get white salsify at the store ( in Ca. )from fall through spring. It looks like a white carrot, in fact many people mistake it for parsnips. The black salsfy or scorzonera has a more pronounced flavor but even seed is hard to find now. Nichol's Seed in Albany Or. used to carry it. Both can be grown in a planter box. You won't be disappointed. Both bake really good oyster stew or good fried.

Salsify would be best but it will be hard to find. I think you'd be satisfied with oyster mushrooms.

what dish are you trying to mimic? If it's raws on the half shell you're sunk.

i dont understand why people become vegan then eat things that are meant to look and taste like meat :/

just make the mushrooms into something, make it up as you go and have fun.
