maybe someone could give me a recipe?

Tzatziki Cucumber Dipping Sauce
4 cups plain yogurt, regular
3 large cucumbers, peeled and seeded
salt
3 garlic cloves (or more to taste)
1 tablespoon fresh lemon juice
1 tablespoon olive oil
fresh ground pepper (optional)
1/4 cup freshly chopped mint leaves (or to taste) (optional)

Line a sieve with a double thickness of dampened cheesecloth.
Spoon in yogurt and set the sieve over a bowl.
Refrigerate for two to three hours or until yogurt is about half its volume, nicely thick and creamy.
Shred or cut cucumber into julienne strips.
Place in a colander in sink or over a bowl, sprinkle generously with salt, mix well and let drain for at least 30 minutes to an hour.
Rinse and gently pat dry.
In a mortor and pestal muddle the garlic into a bit salt.
Add to the thickened yogurt, cucumber, lemon juice, olive oil, and if desired, the pepper and mint.
Mix well.
Serve or refrigerate for a day or two so flavors mingle.
Stir again before serving and sprinkle with additional minced mint leaves if desired.

Taziki sauce. Decrease amounts to meet your needs. It's a very easy sauce. Just make ahead and let sit in your refrigerator for a few hours prior to serving.
1 16 oz. container whole milk yogurt
1 medium cucumber
4 cloves of garlic, finely chopped
2 Tbs extra-virgin olive oil
1/2 cup chopped fresh dill (preferred but optional)
1 tsp salt
1/2 tsp white pepper
2 Tbs red wine vinegar
You can either blend all together in a processor or you can grate the cucumber (cheese grater) and have the sauce a bit chunkier (this way is more traditional).

everyone is basically close, but the thing you really cant f with is the Greek Yogurt. It is unique in that it can be sweet or savory, and goes perfectly with the spice of the meat you use. Sour cream is great, but it makes me think Mexican, and that isn't what we are looking for here. Plain yogurt is too tangy and begs for sugar. Shred the cucumber on a cheese grater so it isn't lumpy. I use chives, onion powder, garlic powder, dill, salt, and white pepper as the seasoning. Add a little vinegar and olive oil, and mix well. Add mint chiffonade at the end.

costco sells a very good Taziki made w/ natural ingrediants about $5 for a big container. you can use it as sauce or water it down for a cold soup or drink. the recipe is basically whole fat plain yoghurt, finely chopped or grated cucumber, olive oil, chopped raw garlic & parsley....so it's easy to make. let it sit awhile in frigerator before serving

A tiziki sauce. In other words a tatar sauce. All you need is mayonnaise,yogurt, and chives mixed together and u got a gyro sauce.

Plain yogurt, with grated cucumbers, is the basic traditional sauce. You can add anything else you like, such as garlic.
