I would like to try something different than your typical cheese dip.

I know canned chili sounds a little sketchy, but this dip is awesome. I can eat a whole pan myself.

1 pkg Cream cheese
2 cans Hormel beef chili
2 cups of shredded cheddar cheese

Soften the cream cheese until spreadable. Spread over the bottom of an 11x7 baking dish. Pour the chili over the cream cheese and sprinkle with cheddar. Bake at 350 until the cheese is melted and the dip is heated thru. Serve with tortilla chips.

I moved to the south a couple of years ago from NY and a VERY popular dip here is Rotel dip. You can find the Rotel in your grocery stores (usually by the canned tomatoes). and the recipe is simply;
brown 1lb of ground beef and a roll of pork sausage (I like to use hot sausage, but some use all ground beef or all sausage)

drain really well and than cut up a block of velveeta cheese and add along with 2 well drained cans (very important) of rotel and stir until cheese melts and serve on top or on the side of some tortilla chips.

*If you feel it is a little to thick than add just a tad bit of milk to thin it out, because the longer it sits the thicker it will get. ENJOY!!!

Something fast try:

Sour Cream and Onion Dip
1 pint of Sour Cream
1 packet of French Onion Soup mix
Best if done the day before and left in the fridge overnight. Great for chips and veggies.

If you have some extra time, these are great if done the night before to let the flavors meld.

Pico de Gallo
6 plum tomatoes, seeded and cubed
1 small red onion, diced
2 cloves of garlic, minced
1 small bunch of cilantro, leaves only roughly chopped
juice of 1 - 2 limes
salt and pepper to taste

Guacamole
3 - 4 ripe Haas avocadoes (these have dark bumpy skin. Must be semi firm. If too soft, over ripe. If too hard, not ripe enough)
2 plum tomatos, seeded and chopped
1/2 small red onion, diced
2 cloves of garlic, minced
1 small bunch of cilantro, leaves roughly chopped
1 jalepeno pepper (if you don't like the heat, clean out the seeds and ribs) finely chopped
juice of 1 lime
salt and pepper to taste

This is a hit at any party!

Seven Layer Taco Dip

* 1 (1 ounce) package taco seasoning mix
* 1 (16 ounce) can refried beans
* 1 (8 ounce) package cream cheese, softened
* 1 (16 ounce) container sour cream
* 1 (16 ounce) jar salsa
* 1 large tomato, chopped
* 1 green bell pepper, chopped
* 1 bunch chopped green onions
* 1 small head iceberg lettuce, shredded
* 1 (6 ounce) can sliced black olives, drained
* 2 cups shredded Cheddar cheese

1. In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
2. Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
3. Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives and serve with tortilla chips.

Beer Dip
8oz cream cheese softened
1 pkg dry ranch dressing mix
3/4 of a can of beer (any kind)
Mix all together till well blended
add a layer of finely shredded cheddar cheese on top of dip
Refrigerate at least 1hr before serving
Serve with pretzels

Soften an 8 oz. brick of cream cheese, spread it on the bottom of a plate. Pour over a jar of your favorite salsa. Sprinkle with fresh chopped red onion, green pepper and slivered black olives if desired. Last, spinkle with shreeded cheddar cheese. Serve with corn chips. It's simple and delish!

Mozzarella Cheese Dip

• small jar of Hellmann's mayo
• 8 oz sour cream
• 3 c shredded mozz. cheese
• 1 tsp of accent
• 1Tbl of parsley flakes
• 1 tsp of celery salt
• 1 tsp of garlic salt
• 1 tsp of sugar

Mix all together and serve with veggies, chips, or crackers.

Fruit Salsa

2 kiwis, peeled and diced
2 apples, peeled, cored and diced
8 oz. raspberries
1 lb. strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor

Mix all ingredients together in a bowl and chill for 15 mintues.

I've done hummus in a bread bowl, and a spinach dip in a bread bowl. A hot artichoke dip would be good too!

Hot Dried Beef Spread

INGREDIENTS:
1 package (8 ounces) cream cheese, room temperature
1 jar (2.5 ounces) dried beef, shredded
1/4 cup finely chopped green pepper
1/4 cup finely chopped red bell pepper
1/2 cup finely chopped onion
1/2 teaspoon coarsely ground black pepper
1/2 cup sour cream
1/2 cup chopped pecans

PREPARATION:
Mix cream cheese well with dried beef, green and red peppers, onion, and black pepper. Fold in sour cream. Spoon into casserole dish. Sprinkle chopped pecans over top. Bake at 350° for 20 minutes.
Serve with crackers.

Hidden Valley Ranch has a fiesta mix that comes in a package, dump it into a big container of sour cream and mix thoroughly. It is always a hit at my parties. It is easy and goes great with veggies and chips.
