I forgot to check my plant for a few days, and now I have a zucchini that is over a foot long. I don't really know what to do with it.

If the zukes are really big don't use the seeds. Slice it lengthwise and scoop the seed out with a spoon and then grate it. Leave the skin on for more nutrients.
Vegan Zucchini Bread Recipe
INGREDIENTS:
* 2 cups grated zucchini, about 6 zucchini
* Egg replacer for 3 eggs
* 1 cup oil
* 2 cups sugar
* 1 tsp vanilla
* 3 cups flour
* 1 tsp salt
* 1 tbsp baking soda
* 1 tbsp cinnamon
* 2 tsp nutmeg
* 1 tsp baking powder
PREPARATION:
Preheat the oven to 350 degrees. Lightly grease 2 bread pans.
Stir together the zucchini, egg replacer, oil, sugar and vanilla. Add the remaining ingredients and stir well.
Pour the batter in to the pans and bake for 50-60 minutes.

I have an awesome recipe from my Mum. When I was small, we used to make fresh zucchini bread all summer together <> Ah, the memories.
Any-who. It has eggs in it...I'm sure you're looking for something w/o eggs? I can still give it to you when I get home if you'd like and then you can just sub the eggs for something else.

Whisk together:
1 1/4 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp cinnamon (I imagine this could be optional if you don't have any)
Blend in large bowl:
3/4 cup white sugar
2 eggs (beaten)
1/2 cup veg. oil
1 tsp vanilla
1/2 tsp salt
Blend dry & wet ingredients together
mix in 2 cups grated zucchini (make sure that you grate the zuc and squeeze all excess liquid out, then measure and adding to rest of ingredients)
Add 1 cup ground pecans or walnuts
Pour into well greased loaf pan and bake at 350 for 45 min (until batter starts to pull away from sides and knife comes out clean) Let cool completely if you plan to remove from pan.
*I made mine with whole wheat flour
* I have also made it with nuts and without.
I found that there seems to be more batter than you actually need. Make sure that you only fill loaf pan 3/4 to the top. I make a couple of muffins from the leftover batter I always seem to end up with.

We love to slice it up, fry in olive oil and garlic and toss with spaghetti-it's simple and delicious.

you should check one of the many vegan cookbooks online. and to the first post, its VEGAN, which means no cheese. unless you mean non-dairy cheese
