The most common is basmati. However, long and short grain brown rice is also not uncommon. They do not boil it in the bag. They usually buy rice that is bought in a bag, but then cook it in a rice cooker, or over the stove.

indian restaurants usually use basmati or jasmine rice. i think for the msot part when it involves having curries and stews with sauces in it, jasmine rice would be preferred. basmati rice i believe is used in the same way but cooked with/together with the meat.personnally, I prefer jasmine rice with a green or red curry
p.s. boil in the bag rice is an insult to rice growers, buyers and eaters everywhere.
