Beet's are a root vegetable, you can buy them most any size, from golf ball size, to baseball size, they are roundish, red, covered in dirt, and are sold either with a stem or not, very, very healthy, I like to steam them or shred them up for a spinach salad. Don't substitute anything for them, taste great, and did I mention they are very, very healthy for you.

beet forms part of the carotene-rich veges like radish, carrot, sweet potatoes and of course beetroot (which is deep red in color and has a sugary scent and is also very sweet). beet is used to make sweeteners for those who need a low-sugar diet. However, even rich in sugar, it contains a lot of Beta-Carotene (vitamin A) which is also an anti-oxidant. It is good for you. So eat it grated raw in salads, boiled and cut into cubes in dishes that require a lot of color.

Beetroot - dark dark reddish purple and usually pickled in vinegar. In a diet it costs nothing - no fat, no calories to speak of.
