My husbands family came in to town this past weekend and all they did was pick on me how I dont know how to make a southern meal for my husband and how I only know how to cook mexican foods ( i am hispanic and my husband is black)! It really got on my nervs but I know my husband loves that kind of food so i would like to treat him evey once in a while! any Ideas?

Yeah, pinto beans, turnip greens, fried chicken, cornbread,
fried potatoes and pecan pie. The pecan pie recipe is on the back of a jar of karo light corn syrup.
Pinto beans: Get dried beans at the store. Remember that they double in size once cooked. Look through the beans and pick out any rocks or beans that have rotten (dark) spots on them. You can cook the halves. Wash the beans in a colander, and put them in a large pot. Fill the pot with water, and cook for 2 hours on medium heat. You will have to fill the pot with water a 2nd time, when the water cooks down. When you fill it the 2nd time, add a little salt. Let it cook until the water is cooked down and the beans are done (soft). If you want (and this is really southern soul food) put some ham chunks or pieces of salt pork in when you start cooking the beans to flavor them.

Turnip greens: Get fresh turnip greens. Look them over for bugs. Put them in a sink of water and wash under running water in the other sink, leaf by leaf. Do this 3 times to make sure you have all the "grit" or dirt off the greens. Put in a pot of water and bring to a boil. Put in some salt pork. Cook over medium heat with a lid for about 2-3 hours until they "cook down". You will need to start out with the pot very full of greens, as they will cook down to less than 1/2 of what they start out to be.

Fried chicken: Get a cut up chicken from the store (I can't go into detail how to cut one up). Wash chicken well. Crack some eggs in bowl and whip. Dip chicken in egg then flour (or cracker crumbs). Have a skillet with about 2" hot oil ready. Put chicken in skillet. Fry chicken over low to medium heat until done.

Cornbread: 2 cups Martha White Buttermilk Corn Meal Mix
1 Egg
1 Cup milk

Mix well, put in greased iron skillet, bake at 400 until brown.

Fried potatoes:
Peel red irish potatoes, slice.
Have skillet with small amount of hot oil in bottom
place potatoes in skillet, salt and pepper potatoes.
Put lid on skillet. Fry until potatoes are soft, turning now and then as they brown. You want potatoes to be slightly browned on all sides.

Voila, a southern meal, and don't forget your iced tea!!!

Here's an easy menu for a traditional southern meal:

Starter: Fried Green Tomatoes

Main Course: Barbecued or Fried Chicken with Corn Bread or Biscuits & Milk Gravy

Sides (pick a few): , Cole Slaw, Collard Greens, Sweet Potato Casserole, Baked Beans, Black-eyed Peas, Potato Salad, etc.

Dessert: Peach Cobbler, Sweet Potato Pie, Pecan Pie, or Pound Cake

Drinks: Iced Tea with Lemon

I love you and all the responders! As a white Virginian, I am entering this discussion, because I scored higher on a soul food quiz than a Black North Carolina girl friend. Check all the recipes on the great links in the answers, and start working the recipes you feel comfortable with, and that are close to your hubby's (God, what a lucky man to have you!) background. At some point you want to stretch his mind -- does he think he doesn't like something really down and dirty (say grits, okra, chitterlings !!) My point is get close to his family, initially, then beat them at their own game. Even if they don't like the REAL thing they will admire you for your guts (chitterlings). And then I am phantasizing about your hispanic version of pickled pigs feet.

I would suggest that you ask your husband what are his favorite "soul food" dishes. And for dessert, please try:

Old-Fashioned Sweet Potato Pie

2 cups peeled, cooked, cubed sweet potatoes
1 1/4 cups sugar, divided plus a pinch
1/4 cup (1/2 stick) melted butter
2 eggs
1 teaspoon vanilla extract or 1 to 2 tablespoons bourbon
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup milk
1 (9-inch) unbaked pie crust
3 egg whites

Cream the sweet potatoes with an electric mixer. This will produce a smooth, creamy pie with no lumps.
Preheat the oven to 350 degrees F.

Filling:
In a large bowl, combine the potatoes, 1 cup of the sugar, butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk, stirring until well combined.
Pour the mixture into the pie crust and bake for 40 to 50 minutes, or until a knife inserted into the center comes our clean. Place the pie on a rack and cool to room temperature before covering with meringue.

Meringue:
Using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar, 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue mixture on the pie, forming peaks. Make sure the meringue touches the crust all around.
Sprinkle with a pinch of sugar. Bake for 5 to 10 minutes, or until delicately browned. Cool and serve.

Don't worry...I think they were just teasing...but in a playful way...my mom is Cuban and my dad is Black...that happens in my family a lot. Try some BBQ baked chicken, baked collard greens and biscuits...you can go buy a store made pie for dessert....Good Luck

Is your husband from the south? Collard greens, okra, mashed potatoes and fried chicken. Yummy! The south is really big on greens, such as collard greens and mustard greens. Or just take him out to Cracker Barrell for supper.

go on the internet and type in soul food receipts that helped me but i grew up in the south so i know alot of receipts or buy a cook book the movie soul food put out an actual cook book but be careful soul food is very salty so just limitt your salt input

I have always liked southern fried chicken with collard greens and corn bread. I would look up recipes by Paula Dean famous TV cook her fried chicken look like its out of this world.

Next time ask the in-laws if they know how to make Mexican food. Or you can ask his family why they didn't teach him how to cook southern food. Stupid people.
