My sister has been a vegetarian for 20 years, so I know where you're coming from. Just remember, that vegetarians can eat almost everything that we can, you just have to eliminate meat. Personally, I love sandwiches with just cheese or grilled cheese. You can keep a selection of different fruits (prepackaged from store is wonderful). We also have a selection of chips and salsa or hummus for when she comes over. If you ever want to cook for him, spaghetti with marinara sauce is perfect. Keep some sweets around. For protein, a lot of vegetarians eat a lot of black beans and cheese. Make black bean tacos! Go to Whole Foods, if you have one in your area, they have a lot of great frozen veggie pizzas and a good vegetarian deli selection (like smoked mozzarella and tomato pasta salad).
It's a misconception that the only things vegetarians can eat are fruits and vegetables.

Well.. it depends on how health concious he is, and how 'Fast" you need this food to be. If he has no problem eating cheesey kinda junk food, keep
Campbell's canned spaghetti or spaghettios
Frozen cheese pizzas (Like Tony's or Totinos).
Healthier things are
Campbell's vegetable soup
pasta can cook in around 30-40 minutes.
Tortilla chips, salsa and hummus!! YUM
tortillas, beans, salsa, chese, etc.. for quick burritoes or quesadillas..
Bread, peanut butter, jam.
Try other meat alternatives such as
chicken nuggets (he'll proabably only need BBQ sauce or katsup to enjoy them)
To prepare a nice meal for him, Make a nice spaghetti meal.
Use a meat-free sauce, and make (in another small pan) some meat-balls for you. Just keep them out of the main sauce that he'll want to eat.
Add garlic bread, salad, and other vegetables to round the meal out.

Vegetarian food is so easy - even the most inexperienced cook can manage a delicious meal. Start simple, look at a few cookbooks - I recommend Rose Eliot's - fabulous! You can find salads, soups, rice dishes and desserts. Personally I like (not from cookbooks):
Carrot and lemon soup
Roast pepper and asparagus salad
Cream pea risotto
Pasta puttenesca
And best of all: Baileys pannacotta, Berries with chocolate sauce, chocolate puddings (of any kind!)

Everything you cook has meat? You can just replace or leave it out in many dishes. Here are some meal and snack ideas:
Pasta with chunky tomato sauce
Veggie stir fry over brown rice
Baked Ziti (make sure cheese is not made with animal rennet)
Pita bread with hummus
Fruit
Rice and beans
Vegetarian chili or tacos
Grilled Portobella mushrooms
Pasta Salad ( I put various items in depending what I have on hand but it's usually diced cukes, tomatoes, onion and bell peppers) w/ Italian dressing
There are thousands of meatless recipes.

A couple of my best friends are vegetarians, and I cannot stress enough the power of salads. If you have lots of vegetables, fruits, and even nuts you can make a great and hearty salad, which is something you can eat too. I know vegetarians who only eat salads for dinner every night, but they're big!
The power of yogurt and granola cannot be stressed enough either, as long as he's not vegan. Cereals and yogurts mixed with raisins, nuts, and granola are a great snack or small meal when combined with something else.
Pastas and raviolis and things are a great alternative to meat as well, especially with a good sauce. They're quick and easy to make too.

You don't eat any real food? Like rice, potatoes, beans, vegetables, pasta, .... ?? Come on, there must be stuff he can eat too.... popcorn...??
Get an air popper for popcorn. Get some flax oil and nutritional yeast to put on the popcorn.
Get come cans of chic peas, beans, tomatoes, and spaghetti. He can throw all that together and make a big meal. Easy.
Crackers are always good and snackable.

You can put any sauces on veggies. Rice, pasta, potatoes. Cook everything but a meat dish. Avocados, chips and dip.
Ask what is favorites fruits are. Have nuts like pecans and pistachios.
Ask if he eats dairy, eggs or fish. Some do, some don't.

Just ask him! If you guys are dating, I would certainly hope you can ask him directly w/o him being offended.
Any-who, fresh fruit is always a good thing - bananas apples, oranges, etc. Veggies are good as well. Baby carrots, cucumbers, grape tomatoes and the like.
He might be into health foods, so ask him if he likes Kashi products. They make some tasty cookies, crackers and granola bars. You might also ask if he likes pita bread...you can keep some simple things on hand so he can make sandwiches out of it - tomatoes, romaine lettuce, hummus, onions, etc. If he's not vegan, he might also enjoy a piece of provolone cheese on it or something.

Ask him. Really. The next time he comes over and asks if there's food, ask him what he would like you to keep on hand so you can feed him when he visits. Or go shopping together and have him pick some stuff he likes.
There are numerous options for veggie convenience food that you can keep on hand for your boyfriend when he visits.

Chips, salsa and avacado dip.
Burritos
Bread with loads of vegetables, cheese, etc to make a nice sandwich.
Pasta, pesto, pine nuts for a quick pasta dish
Vegetables, tofu, rice for a quick stir fry.
It really isn't that hard. Ask him what he might like, I'm sure that he'll tell you.
And on a side note...when I read that....all I could think was....lucky woman....she gets to taste good tasting sperm :S have you noticed the difference yet....TMI?
