How about something like cold stone does and have the option of mixing in the choice of like 3 toppings. To have the cold surface to mix the ice cream on all you need to do is put a cookie sheet in the freezer for a couple of hours, then flip it upside down on the countertop and you have a perfect working surface. Or maybe you could find some where that sells the little bitty dip'n dots ice cream that would be a neat treat.

Instead of just serving ice cream, how about serving ice cream sodas. All kinds of recipes are available on the web. Look for the soda glasses at the local dollar store or maybe you can catch them on sale at Party City. They should have their luau decorations marked down now. Silly I know but they did have soda glasses for a luau. Pick up those fun wiggly straws while there.

make a chocolate cake using a rectangle mold, when its done and cool down cut lenghtwise in four layers, put in a pyrex one of them, then put a layer of orange icecream, then another layer of cake, then other flavour of icecream till you finish, let stay in freezer 24 hrs, then cut a number nine, take it out of the pyrex, put it in another base and cover it with chocolate ganache, then freeze it again and wait for the party!
the ganache you make it with heating some milk say like 1/4 cup, a tsp of butter, and then take it away from stove and add crushed chocolate , about 250 grs. mix it very well and that's it, you can decorate it with sugar decors. good luck!

Since you have found a way to make 'tie dyed' cupcakes, maybe you might like to do something with Neapolitan ice cream....
or to keep your boys happy and busy, get and ice cream ball and let them make their own while playing a game with it...
maybe for a game buy several different flavors of ice cream and blind fold them and have them each try and guess the different flavors the one with the most best answers gets a prize...

Why not a sundae bar? You can set up a table with ice cream, a few different syrups, and fun stuff to sprinkle, like m & m's, fruity pebbles cereal, and gummi bears. Don't forget the whipped cream and cherries, too!
