Pastrami is a corned ( preserved with salt and spices ) beef brisket which has then been smoked. Turkey pastrami just used turkey instead of beef. The taste is similar, not the same but the texture is quite different.
I buy corned beef, coat heavily with coarse ground pepper and smoke it myself.

When I was achef were used it in our rueben sandwiches and for a breakfast hash, it is a little less salty than beef pastrami, leaner and is made by curing breast meat, compressing it and the cooking it in a steamer in a mold, it is then weighted down and vacuum packed.

I used it along with a turkey smoked meat in the Montral style, a sausage for cajun dishes that was spiced and smoked like andouille.

It is one of those meats that can adapt to many way of preparation, we also have a line up here in Canada made with chicken including a chicken bacon, they use the two meats to simulate the striping in pork bacon it has 1/3 the calories and 1/2 the fat.
