Yes, leave it out. It will be fine. The nutritional yeast has lots of B vitamins and a nutty flavor, but it's not critical to the structure of the seitan. I honestly can't taste it in there when I make it...

The recipes I use call for nutritional yeast only in the simmering broth. Find something else to give flavor, and you should be okay.

And get lots of the stuff the next time you go shopping--it's an absolute must in any vegetarian kitchen!
