My baby is being baptized Sunday and we're having a family get-together at the house afterwards. It'll be about 3:30pm, so too late for lunch & too early for dinner. I thought I'd just serve some snacks & hors 'douvers (sp?) but I want to make it special.
Anyone have good ideas for hors 'douvers that won't cost me a fortune or take forever to make?

here are a few recipes that have done well for me, I used to be a caterer, but these are fairly easy.

dip for crackers or pretzels

1pk of cream cheese cubed
lemon zest, lemon juice
coarse cracked pepper and salt
fresh rosemary I dont reccommend dried for this
whatever olives you like, or capers, crushed or sliced
good olive oil

cube cr. cheese on a plattter, you can use 1 or 2 pkgs
sprinkle with some zest, rosemary, olives, lemon juice, salt and cracked pepper, and some parmesan if you like
drizzle with olive oil and let marinate a couple hrs or overnight in the fridge, let it come to room temp before serving. This dip is very flavorful and simple.

bacon crescents

get a pkg of pre cooked bacon and chop up, Stir it together with 1 pk of cream cheese(softened), a little garlic powder, some shredded cheddar 1/2 cup, and some sliced scallions,
unroll crescent rolls and add a little of the filling to the wide end and roll up, bake according to package directions, !pk of cr. cheese will make about three cans of these. During the holidays, I cant make these fast enough.

Carmelized onion tart

thinly slice 1 large red or white onion, or sweet onion if you like. Saute in a few tbs of butter or olive oil, adding 1 table spoon each of brown sugar and balsamic vinegar, and cook for about twenty minutes until golden and carmelized, let cool.
Take a pkg of frozen puff pastry that has been thawed and roll it out a little. Top with the onion mixture and fresh thyme, you can also sprinkle some cheese like goat or parmesan or white cheddar, but it is good without also. Bake in the oven according to pkg directions untill pastry is puffed and golden. Let cool and cut into squares or triangles.

In addition, you can serve some storebought things like almonds, dried fruit, crackers, pretzels, and cheese straws, and maybe a salad. All of these recipes can be made ahead and hold up really well at room temp for several hours. good luck.

Buffalo Wings Recipe

24 chicken wings
1/2 cup butter
1 cup Louisiana Brand hot sauce
vegetable oil for frying

Cut tips off wings and discard. Cut remaining chicken wings in half at the joint. Deep fry them in about 2" of oil in skillet until done. Drain. Melt butter and hot sauce together. Dip fried wings into the sauce. Serve with a blue cheese dip or dressing.

KILLER CRAB BREAD

1 loaf French bread
1 cube butter, soft
1 c. mayonnaise
2 c. grated Cheddar cheese
Sm. bunch green onions, chopped
1/4 c. parsley, chopped
As much garlic as you like, but never less than 2 lg. cloves
1 can crab meat (6 oz.), washed, drained and patted dry

Cut the bread lengthwise and spread the butter evenly on both halves. Mix the mayonnaise, cheese, onions, parsley, garlic and crab together, then spread them evenly over the butter. Cover with foil, folded high above the surface of the bread so as not to touch the mixture.
Bake at 375 for half an hour. Take off the foil and put the bread back in the oven for another 15 minutes or until nicely brown and lethal.

If you want something hot... this just takes some prep time before hand but pretty eash...

Bacon and Waterchestnuts w/ dipping sauce.
1 pound of bacon
3 cans of waterchestnuts (whole)

Cut the pound of bacon 3 times so you have 3 pieces per bacon slice. Then you cut the water chestnuts in half and wrap them with a piece of bacon. Keep together with a toothpick. You can cook them prior and just reheat before hand which I recommend.

The dipping sauce is equal parts of Ketchup and sugar, heated up.

These are excellent and always was the first thing to go at my parties!

Put a block of cream cheese on a plate. Cover with 1 small can tiny shrimp. Cover that with cocktail sauce. Squeeze some lemon juice over it and sprinkle with dill. Serve with Ritz crackers.

Antipasto salad: In a salad bowl, put 1 can artichoke hearts, drained & quartered; 1 bag cherry tomatoes, cut in half; 1 package mushrooms, washed & cut in half; 1 can greek olives, drained; a handful of red onions, chopped thin; snipped fresh parsley. Dress with garlic salt and basalmic vinegar and serve chilled.

Meat antipasto salad: 1 cup each of hard salami (cubed) and pepperoni (slices cut in half) and mozzerella cheese (cubed) and greek olives. Dress with lemon juice, olive oil, and fennel seeds. Serve chilled. Set out toothpicks to stab the pieces with.

Fresh fruit with raspberry yogurt for a dip goes really good with these. And those little frozen cream puffs, thawed, are awesome.

Good luck & enjoy

This is an amazing dip:
1 jar of Kraft Roka Blue cheese spread
1 jar of Kraft Old English cheese spread
1 block of cream cheese

blend together and then add 2/3 stalks of scallions and let set overnight. Dip your pretzels in it! Usually cause of the beige color, people wont eat it at first until one person tries it and then its gone before you know it!

Depending on the grocers, the cheese is either in the dip section by the chips and dips or in the fridge dept by the other cheeses.

Smoked Salmon wrapped around Chardonnay-marinated onions and English cucumber tied with chive with crème fraîche, chive oil and caviar. You could leave out the caviar. I also saw some done on cooked purple potatoes that looked really nice. The were slice to make rounds and then topped with a little cheese a little bacon and chives.....To me the potatoes needed to be cooked more but.....maybe there is a way.

Cracker - Dab of Marscapone Cheese - Small piece of an apple or pear. Stand the pieces of fruit on their end so they stick up high, it looks nice. It tastes good and is not very common, and relatively healthy.
