San-J and Eden both have naturally brewed Tamari and Shoyu that are quite tasty. The only real difference between Tamari and Shoyu is that Shoyu also has wheat and thus has a lighter flavor.

I'd really like to know what you heard bad about Braggs! The only thing I've ever heard 'bad' about it is that it's not naturally brewed but is instead made by essentially cooking soybeans. That's the way most soy sauce is made today and it really isn't a big deal except the flavor tends to be rather harsh.

BTW; Braggs is salty tasting because their process concentrates the sodium naturally present in soybeans (and all plants for that matter).

Soysauce alternative?
Do you mean something that tastes just like soy sauce but isn't made form soybeans?
Hm... well, I know that Tamari is high quality soy sauce that doesn't have anything other than soybeans added -- most soy sauces are a mix of things, such as wheat and rice and even colouring etc.

Bragg soy sauce is a real weird mystery.... why all the mystery surrounding this product? It tastes pretty damned good, but what the hell makes it any different form the others? Non pasteurized? It doesn't say so. Non-gmo? It doesn't say so. Organic -- nope, not that either. It does say Not Fermented, but isn't that how soysauce is made, via fermentation?? OK, well, if it's not fermented, then it must be some kind of cooked product... well, it must be, but the name of the company is Live Food Products... so... how can it be "live" or "alive".

Well, Bragg soy sauce is the best I've ever tried. But why would it be SO salty without any salt being added? Ingredients say soybeans and purified water... neither contain salt in any large amounts.

Someone told me that Braggs could form MSG when stored for long periods. Is that your concern?

I use low-sodium tamari, which is a wheat-free soy sauce.

Nama Shoyu(unfermented Soy Sauce)

I use San J
Gluten Free Soy Sauce

If you can not use Soy use Veggie broth, you will not get the intensit flavor but it usually doesn't affect the recipe all that much.
