VEGETARIAN CHIMI CHANGAS
2 cloves garlic, chopped
10 medium mushrooms, sliced
1 large green pepper, sliced
1 medium-large onion, sliced
1 15 oz can black beans
1/2 cooked white or brown rice
1 cup mozzarella cheese, shredded
10" tortillas
cooking oil
garlic powder
black pepper
crushed red pepper
onion salt
In a frying pan saute garlic cloves, mushrooms, green peppers, onions until soft but still slightly crisp. In a bowl mix cooked rice, black beans together. In another pan heat about 1/2" inch of cooking oil. Warm the 10" tortillas in the microwave until soft. Place a 1-2 large spoonfuls of rice and beans, top with a large spoon of vegetables, and sprinkle with mozarella cheese. Season to taste with garlic powder, onion salt, crushed red pepper, and black pepper. Fold in the edges tightly, and place folded edges down in hot oil. Brown each side until golden brown. serve on a bed of lettuce and tomatoes topped with guacamole, sour cream and salsa. Very tasty!!
OAT STUFFED MANICOTTI (VEGETARIAN)
SHELLS:
1 c. flour
Pinch of salt
4 eggs
1/2 c. water
1/2 c. milk
Place eggs, water, milk and salt in blender. Add flour. Blend well. Refrigerate for an hour or overnight. Fry chilled batter in crepe pans, keeping crepes thin.
FILLING:
1/4 c. vegetable or olive oil
2 onions, finely chopped
1/2 lb. tofu in sm. cubes
1 c. chopped fresh mushrooms
1 1/2 c. steel-cut oats
1 3/4-2 1/4 c. water
Saute onions and mushrooms and tofu until onions begin to brown. Add oats and water. Cook stirring frequently for 20 minutes.
SAUCE:
2/3 c. flour
2 c. milk (soy milk or Rice Dream)
2 tbsp. soy sauce
2 c. water
1/2 tsp. sea salt
4 tbsp. olive oil
2 tsp. dried crushed sage
1/2 tsp. thyme
1/2 tsp. marjoram
Pinch black pepper
Heat oil, add flour, stir often for 2 minutes. Remove from heat, allow to cool for several minutes. In separate bowl combine remaining ingredients. Whisk together with flour-oil. Bring to boil, simmer 10-15 minutes.
Wrap stuffing in shells and place in oiled baking pan that has a thin coating of sauce. Cover with foil and bake at 375 degrees for 45-50 minutes. Serve with a scoop of sauce.

I turn to this website often to find new and interesting dishes to make. I recently just made a tofu and spinach lasagna that was quite good. I probably need to make it a few more times to get it just the way I like it, but other than that, I enjoyed it. And if you like mexican food, there are a lot of mexican dishes that I have come to find don't require any meat. My favorite lunchtime meal is a bean burrito with onion and avacado. You can also make enchiladas with just corn tortillas and red or green sauce, with a side of mexican rice and refried beans. I also love making tostadas. just fry up a corn tortilla in some oil until it's crispy, and then top it with a spread of refried beans, lettuce, tomato and avacado. I also buy the MorningStar Farms faux chicken strips and fry them up with some frozen veggies and then put it all over some instant rice for a delicious stir fry. I've only been doing the vegetarian thing for a little while myself, but I'm getting a lot better at it, and always finding new things to make. Good luck to you!

Veggie Burgers
2 cups mashed beans (any kind; refried beans work!)
1 stalk celery, finely chopped
1 carrot, finely chopped
1/4 small onion, minced (optional)
1/4 cup flour
salt and pepper to taste
about 2 teaspoons veg oil
Mix the ingredients (except oil) in a bowl. Form 6 flat patties. Fry in oiled pan over medium-high heat until burgers are golden brown on each side.

Spicy red lentil soup. it is delicious
Soup Ingredients:
1 c red lentils (Masoor Dahl)
6 - 8 c water
1 yam ( approx 1 lb)
1 c sliced fresh green or yellow beans
1 stalk celery, diced
1/2 red or yellow pepper, diced
1/2 c green pepper, diced
2 - 3 Tblsp olive oil or ghee
2 thin slices fresh peeled ginger
1 jalapeno pepper, sliced in half lengthwise and seeded
1/2 cinnamon stick
1 bay leaf
1 pinch hing or asoefetida (helps prevent gas)
1/2 tsp gr fennel
2 tsp gr coriander
1 tsp turmeric
1 tsp salt or to taste
2 tblsp minced parsley, basil or cilantro as garnish
Instructions:
Clean, wash, rinse and drain the red lentils
If you soak them for an hour, they'll cook softer faster, but it's not required
Bring the water and lentils to a boil, and skim the foam
Prep the veggies
Add the ginger slices, jalapeno, bay leaf, cinnamon stick to the lentils.
Cover and simmer 1/2 hour - 15 minutes if soaked
Heat the oil, & add the hing
Add the veggies, and saute 5 minutes on med/high heat
Add the spices, saute briefly, remove from heat
Remove the ginger, cinnomon, jalapeno & bay leaf from the lentils
Puree with a whisk or blender stick
Add the sauteed veggies & spices
Bring back to a boil, cover and simmer another 1/2 hour
Add salt, minced herb

Meatless Chili Colorado
2 (28-ounce) cans whole tomatoes, undrained
4 (15-ounce) cans kidney beans, drained and rinsed
4 cups water
4 cups chopped onions
1 cup chopped celery
1 cup chopped fresh flat-leaf parsley
1/4 cup tomato paste
3 cloves garlic, finely chopped
1 tablespoon vegetable oil
1 tablespoon chili powder
1 teaspoon ground black pepper
Cooked rice for accompaniment
Combine tomatoes with juice, kidney beans, water, onions, celery, parsley, tomato paste, garlic oil, chili powder and pepper in a large stockpot. Bring to a boil, stirring to combine. Reduce heat to medium and cook, partially covered, for 3 hours, stirring occasionally.
Meanwhile, cook rice according to package directions; set aside. Serve chili over rice.

You can grill or broil vegetables like zucchini and eggplant. Brush slices with olive oil and a little balsamic vinegar and garlic powder. I then put them in a spinach wrap with shredded cheese and fresh tomatoes and a little basil.
I also get fresh broccoli florets, dip in beaten egg and dredge in parmesan cheese and deep fry, dip in warm marinara sauce.

Apart from many creamy vegetable soups (you can prepare them in advance and freeze small portions) I like curries with potatos,lentils and veggies/diff. rice dishes eg Thai,italian etc. Also egg benedict or mushrooms on toast will give you a change.
