Chuck some potatoes (you had better wrap them in alfoil or you will get to messy) in the hot coals, they take a while to cook so maybe half cook in boiling water at an earlier time & maybe put some butter or oil on them (before you wrap them up ) not real sure what that will do but trial & error there i never do but.....
then just chuck corn ,carrots etc on the bbq
& earlier boil up some green lentals & steam some silverbeet & get some low fat pampus puff pastry sheets & make a few of them in the oven (make what ever shape you like ) & you can keep them warm at the edge of the bbq & have some salad & boiled rice with peas or corn through it etc

Tempeh is also good. You can marinate tempeh for 30 to 60 minutes in a simple marinade and grill it in cutlets. Or you can make kabobs with tempeh and vegetables. All you have to do is pull the tempeh out of the package and start your recipe. Some cooks say to steam the tempeh for 15 minutes, but I'm too lazy to do that.
Tempeh is a fermented soybean product that has a nutty, chewy texture. Any good natural foods store will have it, although I've seen it at my local Safeway. Tempeh crumbles easily, so you might want to use a grill pan or one of those grill "cages" that keeps the food from falling onto the coals.
There are also tons of analogue products on the market, but if your friends are vegan, make sure they don't have any dairy or egg products in t hem.

There is a 'BBQ Riblets' that is vegetarian..you just go down the vegetarian section in the store or the "health food area" and you will find them in the frozen section. They are great right off the bbq and they will fit right in with your BBQ, just remember that they do not have to stay on the BBQ as long as other real meat. Then you can serve regular potato salad (no bacon added), chips and dip, etc. Yum!! Have fun and enjoy!!

Have you heard of glutinous flour? Those are available at any health food stores. It is very easy to prepare. You can turn them into chunks of beef or chicken look alike meats by just mixing it with water and boiling it for at least 30 minutes. Once boiled, marinade with soy sauce, crushed garlic, chopped onions and sprinkle some ground pepper. Let the chunks absorb the flavor for at least one hour before actually placing them on the barbecue grill. You might also want to try grilled fruits and vegetables. It's really good! Good luck!

Since fresh tomatoes, green beans and corn are in season now, here's somethings that are easy and yummy. You don't have to be fancy to enjoy the summer's fresh veggies. BroiledTomato Eggplant Sandwich 2 ripe tomatoes 1 small eggplant, the same diameter as the tomato fresh mozarella cheese fresh basil Preheat your oven to 350. Cut the eggplant into 1/2 inch round slices, and fry in a little olive oil on each side until golden. While the eggplant's frying, dip both tomatoes into boiling water for 10 seconds, then take out. The skin will slide right off when you peel them.Core the tomatoes, and cut each in half into 2 rounds. Trim off the top and bottom so you will have 4 slices. On a oiled cookie sheet make a sandwich, from the bottom up .....eggplant slice, then tomato slice, then about 1/2 inch round of mozarella. Salt the cheese, and top with pepper and chopped basil. This will make 2 sandwiches each, which should be plenty. Put under the broiler until the cheese melts and turns a golden brown color. Easy and yummy! Buy 4 ears of fresh picked corn. Put them into your microwave (honest!) for 6 minutes, then take out, shuck and serve. Buy 1/2 lb of green beans. Wash, cut off the tops, and cut them into 3-4" lengths. Put into a small covered pan, cover with water, and bring to a boil. Then turn off the water and let them cool. They will cook while they are cooling. Take about 2 Tb. butter, and melt it in a small pan. Add about 1/3 cup bread or ritz cracker crumbs to the butter and heat until the crumbs turn golden brown. Serve the beans with the crumbs on top. This is the Hungarian way to cook green beans, and all my veggie friends seem to love it. For dessert, make a bowl of sliced fresh fruit. Add sugar or equal if necessary. Layer it in glasses with vanilla yogurt for a special treat. Easy and delicious. Have a wonderful meal. Your friend will feel really special. Good luck.

Eggplant broils well and can be topped with grated cheese. Simply split tender young ones or cut older ones in circles. Spanakopita is also a good dish that can be made ahead.
1 lb. filo pastry (in freezer section)
3 lbs, fresh spinach, or large bag frozen
1/2 bunch parsley
2 bunches green onions
2 Tbsp. salt
1 lb. feta cheese
5 Tbsp. olive oil
1 doz. eggs
1/2 lb. butter
Wash spinach, removing coarse stems, drain well. Mince spinach, green onions and parsley. Combine with salt and press firmly (I do mine in a colander with a large bowl of water for the weight) to remove as much water as possible. Combine with crumbled cheese, eggs and oil, mixing well. Filo package should give directions for cutting and making triangles. Brush each layer with melted butter as you lay it out, 2 Tbsp. filling is good center for small triangles, 1/3 cup for large half sheet triangles. Alternatively you can make it in a pan using 4 layers of filo on top and bottom and alternating spinach mixture and filo sheets for center, brushing each filo layer with butter. Bake at 300˚ for 1 1/4 hours.
Black beans and rice is also good. Packaged mix makes up in about 25 minutes and is scrumptious served on mixed green salad with vinegar and oil. Try the Goya mix.

Grill some veggies. Corn, eggplant, asparagus, squash...almost any firm vegetable can be grilled. For dessert try grilling some pineapple or peaches and serve them over ice cream. Yum city.
