Oh I for got to mention that it has to be veggie and I have no idea.Can you link me to some websites or arrange a meal plan or something or whatever you do for a dinner meal that is wonderful tasting.

His family is meat eaters so I need to impress them with some veggie meals and drinks.

Help please.

INGREDIENTS
1 pound penne pasta
2 tablespoons olive oil
8 ounces portobello mushrooms, cut into 1/2 inch pieces
1 teaspoon dried basil
1 teaspoon dried oregano
2 cloves garlic, minced
1 (28 ounce) jar spaghetti sauce
4 cups shredded mozzarella cheese
8 ounces Gorgonzola cheese, crumbled
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Pour a glass of ice water over the pasta to stop the cooking, but do not rinse thoroughly.
Preheat oven to 350 degrees F (175 degrees C). Coat a 9 x 13 glass pan with olive oil. Heat 2 tablespoons olive oil in large skillet. Add mushrooms. Cook for 2 minutes then add basil, oregano and garlic and cook 1 minute more. Add sauce to mushroom mixture and stir.
To assemble, pour enough sauce in the bottom of the pan to cover. Combine the remaining sauce and the pasta. Place one-third of sauced noodles on top of sauce in pan. Top with 1 cup of mozzarella and one-half of the gorgonzola. Repeat for a second layer. Put the final third of the noodles in the pan and top with the final 2 cups of mozzarella.
Bake for 30 to 45 minutes, or until cheese is browned. Serve.

INGREDIENTS
2 large onions, finely chopped
1 cup chopped fresh mushrooms
1/4 cup finely chopped green pepper
2 tablespoons butter
3 cups grated carrots
1 1/2 cups chopped celery
5 eggs, beaten
1/2 cup chopped walnuts
1/4 cup unsalted sunflower kernels
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
3 cups soft whole wheat bread crumbs
DIRECTIONS
In a nonstick skillet, saute onions, mushrooms and green pepper in butter until tender. In a bowl, combine the mushroom mixture, carrots, celery, eggs, walnut, sunflower kernels, salt, basil, oregano and pepper. Stir in bread crumbs:
Coat a 9-in. x 5-in. x 3-in. loaf pan with nonstick cooking spray, then line with waxed paper. Transfer vegetable mixture to a prepared pan. Bake at 350 degrees F for 1 hour or until a meat thermometer reads 160 degrees F Let stand for 10 min before slicing.

INGREDIENTS
2 (15 ounce) cans pinto beans, drained and rinsed
1 (28 ounce) can crushed tomatoes
1 (16 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can yellow hominy, drained
1 (6 ounce) can tomato paste
1 (4 ounce) can chopped green chilies
2 small zucchini, halved and thinly sliced
1 medium onion, chopped
1 1/2 cups water
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon sugar
1/2 cup shredded Monterey Jack cheese
DIRECTIONS
In a large kettle or Dutch oven, combine the first 15 ingredients; mix well. Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes. Sprinkle with cheese.

4 teaspoons nutritional yeast
4 tablespoons light soy sauce
2 cups vegetable broth
1/2 teaspoon dried sage
1/2 teaspoon salt
1/4 teaspoon ground black pepper
DIRECTIONS
Heat oil in a medium saucepan over medium heat. Saute onion and garlic until soft and translucent, about 5 minutes. Stir in flour, nutritional yeast, and soy sauce to form a smooth paste. Gradually whisk in the broth. Season with sage, salt, and pepper. Bring to a boil. Reduce heat, and simmer, stirring constantly, for 8 to 10 minutes, or until thickened.
INGREDIENTS
2/3 cup sesame seeds
1/3 cup vegetable oil
3 (10 ounce) packages frozen green beans, thawed
1/3 cup soy sauce
black pepper to taste
DIRECTIONS
Toast sesame seeds in a large dry skillet over medium heat until they turn golden brown. Spread out onto a plate and allow to cool.
Heat vegetable oil in a large skillet over medium-high heat. Add green beans and soy sauce. Cook, stirring constantly, until the beans are hot and tender, about 10 minutes. Season with black pepper to taste, and toss with toasted sesame seeds.

Try a casserole dish made with either rice or pasta, and add beans, chopped onions, chopped green and red peppers or zucchini, and make a sauce from canned golden mushroom soup. Cook the rice or pasta, but don't overcook. Drain well and add the beans and veggies. Add the soup right from the can. Don't dilute it with water. Mix the ingredients well and put in a casserole. Top with grated parmesan or cheddar cheese. Put in a 350 degree oven for about 30-40 minutes. Serve with heated dinner rolls and a caesar salad made with romaine, caesar dressing, garlic crutons, and grated parmesan cheese. For dessert, try layering vanilla yogurt, fresh peaches, and granola in parfait glasses if you have them. If not, any tall glasses will work. There are many vegetarian cookbooks that can give you ideas for the future. But confidentially, if people are meat eaters, it's not very easy to try and convert them to vegetarianism. Start with a salad and for a main meal try

Sliced bell peppers of various colors, 1/2 chopped onion, 1 tbs garlic, and 1 zuccini chopped. Steam in a skillet with olive oil and add in white pepper, cheyenne pepper, and ground cummin and if you like some Seitan. Add wochershire sauce and a slight bit of soy milk and bring to a boil. Serve over grilled Portobella mushrooms.

or Try vegetarian tocos made with soy ground beef crumbles by morningstar farm. Most people don't ever notice the difference. I would say soy and seitan is the best alternative to meat and its vegan.

For Dessert try 1/4 cup melted semi sweet chocolate chips blended together with 1 lb silken tofu for a great chocolate mousse.

why dont you do a casserole like broccolli cassreole and some bread and salads as an appetizer, really simple for the broccoli casserole you need a large glass baking dish and 3 packs of frozen brocc boxes or 1 and a half large bags, 1 and a half eggs, 1 and a half cups cheddar cheese, 1 can cream of mushroom soup, 1 medium finely chopped onion, 1 cup mayonaise or fat free miracle whip,boil broccoli and drain mix with other ingredients add teaspoon salt and pepper for flavoring bake at 350 for 30 min or until browned lightly on top, serve with loaf of italian bread that has been sprinkled w mozzeralla cheese, good luck!

I would make a vegetarian tapa's night.. Tapa's are always fun and flavoursome and have alot of vegetarian versions,

Maybe start with some turkish bread and celery/carrot/capsicum sticks and dips,

then go onto some spinich stuffed field mushrooms and then potato croquettes with tomato & onion relish,

next maybe some vine leaves stuffed with rice and herbs and sundried tomatoes.

then maybe a small pot of curried carrot or lentil soup,

then I'd finish with a vegetarian Paella (sp) Its a spanish rice dish with lots of flavour and spice..

then finish up with a fresh fruit platter and sorbet..

Also for the drinks try sangria.. you can make an alcoholic verion or non alco version..

Thats sure to knock their socks off!!

For really impressive and delicious foods that most meat eaters will eat and not miss the meat try Greek or Japanese - A Greek menu of Falafel with Tzaki, pita, Dolmas, Tabuli, Baklava and Rich coffee with Ouzo (or Iced black tea with lemon) - Japanese - Claypot Tofu and eggplant-Tempura veggies (tip white onion has a "shrimp like" taste) with sushi rice and Soju cocktails made with cucumber juice and slices (serve up in a Martini glass) or cold Sake, green tea (hot or cold). The rich complex flavors are enough to satisfy most any pallet and they have no idea that the meat was "missing". Good Luck!

You could do Italian;
Veg. Lasagna
Bruschetta
Garlic Bread, bread sticks or foccacia
Green or Pasta salad, etc.

Or, just google "Vegetarian Recipes", and you'll find lots of great recipes.

I would start with a nice italian dish - perhaps a really nice salad, some sort of pasta with marinara and garlic bread - maybe a strawberry shortcake for dessert -
