It seems like chile colorado. I'd have to look at it to make sure, but your description looks pretty much like chile colorado.
Carnitas aren't usually served with sauce, it's shredded and served with other foods. I guess you can say it's Mexican pulled pork sans the sauce. You can put it in a tortilla with other ingredients for a carnitas taco or burrito, or you can make a torta (sandwich) out of it with avocado, mashed beans, lettuce, tomato, mayo, served on a bolillo ("bo LEE yo") which is a French roll. YUM!!!
There is a pork dish called chicharrones en chile verde. Before I became a vegan, this was my dish, yum!! It's pork skin (chicharrones) with pork meat attached to it, cubed up and cooked in a green chile sauce. Sounds kinda nasty, but it's soooo good! It's not often found in restaurants, 'cause it's one of those home cooked foods, not fancy enough for restaurants.

Yes its called carne de puerco con chile!!You need 4 boneless pork chops (thick)
3 tomato's
1 chile jalapeno,a hand full of chile de arbol seco!2 pieces of garlic,and half an onion!1 cube of chicken bullion
Cut the pok chops into medium sized cubes,brown in a skillet with 4 tablespoons of corn oil,in the mean time boil your chiles,3 tomato and 1 piece of garlic.Once you see the skin from the tomato starting to peel off the tomato pour out the water.Put the tomato,chiles,garlic and onion into the blender add some salt,puree.Drain some of the excess oil from your pork chops.Fry 1 bay leaf with your pork for like 1 minute!Add your chicken bullion, then the sauce!simmer for like 10 minutes!Of course taste it to see if you need seasoning!

It might have just been pork in ranchero sauce. But it was probably Al Pastor, a marinated pork popular in tacos and burritos. The marinade\sauce has an orange-red color and adds a lot of flavor without being spicy hot.

You had a Carne Guisado, or a Guisado de Puerco. The first is beef (beef is usually paired with the red sauce, pork with the green). You can easily find it on menus if you live in Texas. It's a very northern mexican food.

If it was more brown than red, it was mole', most likely. I think you mean "Juarez...not Juarex". If this is true, Chili Colorado was probably the sauce. You can always look at epicurious.com to check for almost any recipe.

I think you might be talking about Chili Colorado or Carnitas (which actually tend to be drier and don't usually come with sauce). Also look at chili verde (green sauce)
