A vegetarian eats no animal flesh--no cows, chickens, pigs, sheep, goats, fish, etc. A vegetarian also avoids gelatin, as it is made from the bones, hooves, and flesh of animals. A vegetarian also avoids stocks made from animals.

A vegan avoids the above, but also avoids animal milks, eggs, bee products, silk, wool, leather, fur--basically, a vegan strives to avoid products that are the result of animal exploitation. So, since I am vegan, I avoid zoos and animal circuses. I won't buy products I know are tested on animals, nor will I buy from corporations who still engage in animal testing.

The most straightforward answer is that a vegetarian only gives up meat, whilst a vegan gives up meat, dairy and eggs (and all animal byproducts), but it actually depends on the type of vegetarian; a pesco vegetarian gives up all meat except poultry and/or fish and also eats dairy and eggs, an ovo-lacto vegetarian eats eggs and dairy but no meat, an ovo vegetarian eats eggs but does not eat meat or dairy, a lacto vegetarian eats dairy but does not eat meat or eggs and a vegan doesn't eat dairy, eggs or meat.
