Rachael Ray's Chicken Cigars
1 1/2 pounds ground chicken breast
2 teaspoons ground cumin
2 teaspoons paprika
2 teaspoons poultry seasoning
2 teaspoons chili powder
2 teaspoons grill seasoning (recommended: Montreal Seasoning by McCormick), half a palm full
2 tablespoons chopped parsley leaves, a handful
4 sheets phyllo dough
4 tablespoons butter, melted
Preheat oven to 425 degrees F.
Place chicken in a bowl and mix with spices and parsley. Place a piece of phyllo on a nonstick cookie sheet, butter it and top with a second sheet. Divide the chicken in half. Form a 1-inch thick log the length of the long side of the phyllo dough. Roll the log in phyllo tightly. Cut the chicken filled phyllo into 4 "cigars" and brush with a dab more butter. Repeat to make a total of 8 chicken and phyllo roll-ups.
Bake 12 to 15 minutes until golden.

Artichoke Wonton Cups
1 cup grated Parmesan cheese
1 cup mayonnaise
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 cups shredded mozzarella cheese
1 (14 ounce) can water packed artichoke hearts, drained and chopped
1 (12 ounce) package wonton wrappers
In a small mixing bowl, combine the Parmesan cheese, mayonnaise, onion powder and garlic powder; mix well. Stir in the mozzarella cheese and artichokes; set aside.
Coat one side of each wonton wrapper with nonstick cooking spray; press greased side down into miniature muffin cups. Bake at 350 degrees F for 5 minutes or until edges are lightly browned. Fill each cup with 1 tablespoon artichoke mixture. Bake 5-6 minutes longer or until golden brown. Serve warm.

You can make a suer simple thing.one of your apetizer can include mini sandwiches.
Simply cut you bread in shape of hearts , stars, ....... with the use of a simple cookie cutter.Then you can put some butter and american caviar, salmon, cream cheese and ham or salami and bake some to make brushetta out of them and toss them with an olive tapenade.Think out of the box but remenmber to keep it easy.
Drinks: Boody mary will work as you can make enourmous batches and enjoy the party.

PEPPERONI PINWHEELS
4 C. Diced pepperoni
4 C. shredded part-skim mozzarella cheese
2 Tsp. dried oregano
8 eggs, separated
8 can refrigerated crescent rolls
In a bowl, combine the pepperoni, cheese, oregano and egg yolk. In a separate bowl, whisk the egg white until foamy and set aside. Separate each can of the crescent rolls into four rectangles. Spread the pepperoni mixture over each rectangle leaving 1/4 in. at each edge. Roll up, starting with a short side, and pinch the seams so they will seal. Cut each into six slices. Place cut side down on greased baking sheets and seal the perforations. Bake at 375 F for 12-15 minutes or until golden brown. Makes 16 dozen.
MAKE-AHEAD CHICKEN FINGERS WITH HONEY-MUSTARD SAUCE
Prepare the honey-mustard sauce up to 2 days before you cook the chicken and let marinate in the refrigerator so flavors have time to blend. Fry the chicken up to 1 day ahead and refrigerate.
Honey Mustard Sauce:
4 c. honey
2 c. Dijon mustard
32 skinless, boneless chicken breasts
8 c. all-purpose flour
4 tsp. salt
2 tsp. pepper
6 c. milk
vegetable oil for frying
Directions:
Cut chicken into 1/2 x 2 in. strips. Pour oil into a large heavy skillet. Heat over medium-high heat. Mix flour, salt and pepper in a bow. Dip chicken in mixture. Roll in flour to coat well. Fry, turning once, for about 3 minutes on each side or until golden brown. Wrap in foil and refrigerate. Reheat in a 300 F oven before serving. Serve with honey-mustard sauce. Serves 48.

1. it is an old english dish called chutney, you serve it with cream cheese and triscuts ( the best type of chutney is Hot Mango)
