My favorite recipe involves tofu, so if you haven't seen my little primer on avoiding mushy tofu syndrome, let me know, and I'll tell ya. This was on the site a long time ago before they updated it, and this recipe vanished.

1 lb tofu sliced
olive oil
1/4 cup nutritional yeast
2 tbsp flour
1 tbsp vinegar (I use balsamic, but cider will work)
2 tbsp soy sauce (tamari or Bragg's is okay)
2 tbsp lemon juice
1 bell pepper chopped, or a handful of frozen bell peppers
a few green onions, chopped
capers

Saute tofu in oil until it starts to brown. Add nutritional yeast and flour and continue sauteing until tofu is coated. Add a tiny splash of water, if necessary. Add vinegar, soy sauce, and lemon juice, and stir to coat until liquid is absorbed. Add peppers, green onion, and capers, and stir until veggies are tender crisp.

Serve with favorite side dishes.

One cup of dried lentils (no need to presoak).
1 cup carrots, chopped
1 cup celery, chopped
1 medium yellow onion, chopped
1 large potato, diced
1 (14 oz.) can diced tomatoes,(throw the juice in too)
4-6 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 tsp dried thyme
1 tsp salt
fresh ground pepper

Rinse the lentils off and pick through them to make sure there's no rocks in them. Put all in a soup pot. (Dutch oven is ideal) Add water until the lentils are covered by about 2 inches of water. Cook for about one hour or until the lentils are tender. Adding water if the lentils soak up too much of it. It should have a "stew like" consistency in the end.

Make vegi spaghetti

- 2 small zucchini diced
- 2 cups cauliflower florets
- 1 can diced tomatoes
- 1 can crushed tomatoes
- 1 tbsp dried basil
- 2 tsp honey

Sweat the vegies in a skillet, then add everything else until tender.

Serve with cooked pasta and parmesan cheese.

It's my husbands fav. meal and it's super easy. You can use any vegetables if you like, and add onion or garlic for more flavor.

I always have a Green Smoothie with me. I’ll take it to the movies for my snack or keep it in a cooler, in my car, when I’m out running errands. This way, if I get hungry or have any cravings, I can drink my green smoothie and be satisfied and full of pure, natural energy.

Green Energy Smoothie

2 cups of filtered or spring water
1 handful of Organic leafy greens such as spinach, kale, parsley, romaine lettuce, etc...your choice
2 pieces of Organic fruit (depending on size and sweetness desired) for ex: banana and/or apple, mango, berries, etc.

Put all of it in a blender, give it a whirl, and ENJOY!

Amazing Soups
Another thing I do is make lots of Raw Vegan soups, which are fantastic on your digestive system. Raw soups are a great way to eat more greens, so you're getting tons of minerals. When I make a soup, again, I make a large batch so it lasts 3-4 days. It might mean eating that soup for 3 days in a row, but it's so delicious I don't mind. Some ideas to keep in mind when making soups:
Use high water content veggies such as zucchini, celery, tomato, cucumber, or bell peppers. Add a leafy green for superior nutrition like spinach, chard, or kale. Add 1-2 cups of water. Add some salty seasoning (Himalayan pink crystal salt is my favorite, wheat-free tamari, or miso). Then, add a little citrus (fresh orange, lemon or lime juice) really perks up and brightens the flavor. Next, if you want, add a fat (i.e., avocado, olive oil, flax oil, hemp oil, or coconut oil). Finally, add seasonings such as garlic, basil, ginger, onion powder, etc). BLEND and ENJOY!

For those of you with major sweet tooth, try eating Raw Plant Based desserts! Raw desserts are really really good and they're super nutritious. Here are a couple of ideas to get you started:

Eat Dates! Buy the Medjool variety (found in health food stores - probably most grocery stores in general, but I usually shop at health food stores) and they're in the produce department or the bulk aisle. I prefer the ones in the produce department. These are sweet and delicious and you might fix your sweet tooth just by eating a few of these.

Variation with a date. Take out the pit and stick an almond or pecan inside. OH MY GOSH!!!!!!! YUM!!!

boil some pasta...fusilli or shells work really well,
then mix together sundried tomatoes (in olive oil..but dump most of the olive oil off of them), pine nuts, kalmata olives, garlic, basil, oregano, and some salt and pepper together in a blender, mix that with the pasta...quick and easy..AND yummy!!
