I would go with Italian considering the rest could get old. I think Italian food has the most variety. Don't get me wrong, I like it all.

I just spent 3 weeks in Italy. The food varies from region to region. It's different in Rome than in Florence and Sorrento. The varieties of vegetables that are used for sauces are only used when they are in season, so if its the wrong season you cannot get that particular dish made. Italian cooking in Italy has all natural ingredients. The choices of cheeses, wines and olive oils are unending and you can get them all here, so I have to say italian cooking is my favorite. I love mexican and chinese too but hands down italian food rocks.

The food culture of Italy is probably more varied than any other country, excluding the U.S. The influence of Greece,Spain,France and Switzerland are apparent in the cusine of Italy, not at all like what we think of here as Italian food. You can travel Italy and find entirely different ingredients in each region; seafood, fish, chicken, beef, veal, pork, sausages, etc. Vegetables and fruit flourish in the moderate climate. So, I too agree that I would never grow tired of Italian food.

I think I would go with Cajun, given that I grew up with it.

But I'm like you, I like it all. A cousin even wrote an Italian cookbook, so I love it, too!
