Salad recipe: minted lamb and spinach
Recipe for a salad featuring lamb and spinach in a minty yogurt dressing - a great main course or side dish.
This healthy, fast and easy to make vegetable and fruit salad makes a great side dish, desert, or first course for a family dinner or dinner party. This recipe serves 4.
INGREDIENTS:
2 cups cold roasted lamb, diced
½ cup fresh spinach, washed and shredded
3 cups mixed vegetables, defrosted (peas, carrots, corn)
1 tsp. salt
1 tsp. black pepper
1 cup cooked long grain rice, cooled
3 cups yogurt
1 tbsp. dried mint
lettuce leaves to serve
METHOD:
Combine lamb, spinach, peas, carrots, corn, salt, black pepper, rice, yogurt and mint. Arrange lettuce leaves on a platter.
Spoon lamb mixture on top. Serve chilled as a great main course.

Spinach is great. Carrots are good. Peas I could live without.

Oh yeah i like peas and carrots , but carrots more than peas.

I like carrots and spinach but they have to be seasoned can't eat bland,not too keen on peas.
