olive oil is one of the most important element of mediterranean diet; is the best kind of fat you can eat 'cause totally vegetal and natural, especially the extravirgin.
The best way to use it is uncooking it!

It is better for you than regular vegetable oil, because olives contain good cholesterol, which helps to reduce your HDL cholesterol levels. That does not mean you should be drinking it, but obviously if you can substitute it in cooking then go ahead. I would not recommend olive oil in cakes and muffins because it has a strong taste.

Well, not if you drink it by the cup,as an aunt of mine does. We do need a small amount of fat in our diet, and olive oil is a plant based polyunsaturated source.
And it tastes good.
