Well, they were gods. Gods typically don't die, from what I've heard.

they were believed to be immortal because of many reasons, one in particular:
If you served something for more time than you can remember, how would you feel if, all of a sudden, it dies and leaves no trace whatsoever of ever being there, or ever answering any of the prayers and sacrifices that you made for it?
The entire population of it's people would fall into some sort of existential crisis

Because its what all people want of their gods. Christian, Jew, Muslim, Hindu, etc.
